This dish comes together so quickly and tastes amazing! I love making it on weeknights when I am short on time. I can toss all the ingredients into one pot and sit it in the oven and forget it. You could also cook this in a slow cooker if you wanted to make it before heading to work, just skip the searing step or sear everything in a pan and transfer to the slow cooker.

  • Step 1

    Preheat an oven to 350 F. Heat dutch oven on medium-high until hot. In the meantime, season chicken thighs with 1 teaspoon salt on both sides. Add olive oil to the pan and then the chicken thighs skin down. Sear for 5 minutes on each side until brown.

    Smash garlic cloves, peel and slice ginger into thin slices and cut scallions into 2” pieces. Add soy sauce, apple cider vinegar, water, ginger, scallions and garlic cloves.

    Bake in the oven for 1.5 hours or until chicken is tender. On the other hand, you could place all the ingredients in a 4 quart slow cooker and skip the searing step. Cook on low for 7-8 hours until chicken is tender.

                    After 30 minutes in the oven, it was past done, the chicken kind of dry and the pot was full of baked on sauce. Needs tweaking ..... very tasty though.

                      I made this in the crockpot for dinner, but it was falling off the bone at lunch so we had it for lunch. Excellent flavor and so easy to make.

                                Amazing!!! Tweaked with on-hand ingredients! It’s delicious! Instapot version. 8 mins with skin on boneless thighs. Red onion, minced garlic, ginger paste, liquid aminos (can’t do soy), AC vinegar. Browned skin side on stove. 1 cup water in instapot. Heated water by putting on sauté then dropped seasoned browned on one side thighs. Topped with red onions and poured sauce on top. Voila. Easy. Delicious!!!

                                      This was amazing! I marinated the chicken for 1 1/2 hours and then seared them. I also cooked them on stovetop for 45 minutes instead of the oven. Thank you!

                                          Amazing flavor! Based on other reviews, I only cooked this in oven for about 45 minutes, instead of the recommended time. The chicken was very tender but not overcooked. There was enough sauce to put it over rice for the kids.

                                            This is a great dish. However DO NOT COOK IN THE OVEN FOR 1.5hour - I cooked it a little more in the stove and put it in the oven for 25min I added some tofu shirataki noodles and they loved soaking up the sauce. Will defiantly cook this again.

                                              Do you think the recipe calls for bone in, skin on thighs? It’s not really clear except for the “yield after cooking, bone removed” comment in the measurements description of the chicken thighs.

                                            I use chicken breast and do it on the stove top. I also add cabbage in right at the end until it's just wilted. Very tasty meal!! I eat this once a week, sometimes more.
