Keto Cream Cheese Scrambled Eggs with Prosciutto
These creamy scrambled eggs are rich with cream cheese and aromatic chives and served in crispy prosciutto cups.

Raw Egg Whole
4 medium
Prosciutto
4 slice
Cream Cheese Spread
2 tablespoon
Chives
1 tablespoon, cut pieces
Unsalted Butter
1 tablespoon
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Preheat the oven to 400 degrees Fahrenheit.Step 2
Arrange the prosciutto in the cups of a muffin tray so that it covers the base and the sides, forming four cup shapes. Bake for 7-8 minutes until hot and crisp.Step 3
Whilst the prosciutto is cooking, add the eggs to a mixing bowl with the salt and pepper and whisk to combine.Step 4
Heat the butter in a large pan over a medium heat and add the beaten egg, allowing it to settle in the pan and start cooking a little.Step 5
Add the cream cheese and chives to the pan on top of the egg.Step 6
Use a fork to mash the cheese into the egg and scramble the mixture. Cook the eggs to preference.Step 7
Divide the egg mixture evenly between the four cooked ham cups to serve.

Tasty. I used 2 T heavy cream instead of cream cheese... nice & fluffy & super yummy. I also stir fried some greens to eat with it.

Awesome recipe. I used parsley and pastrami because that’s what I had. Followed suggestion to not add additional salt. Still turned out amazingly good… can’t go wrong with the cream cheese! Definitely a keeper

Love the eggs with the cream cheese. The salt taste is overwhelming with prosciutto baked in the cup formation .

Don't add the salt!!! Proscuitto is salty as is and you can taste it in the recipe. A little too much for my liking but overall good recipe, light and tastes delicious with cream cheese.

Delicious!! Bacon works as a good substitute for the prosciutto, just cook a little longer, until your preference.
