7 ratings

What's better than eating a dessert that is both delicious and loaded with so many nutrients? Chia pudding is by far one of the best desserts to eat when you are craving something sweet. It's simple to make, tastes delicious, and will leave you feeling satiated. Chia seeds have great nutritional value and make an excellent staple to have when on a Keto diet. The combination of dark chocolate chips with peppermint extract could easily make this dessert pass for a healthier version of mint chip ice cream.

Can you use coconut milk in this Keto mint chip chia pudding?

Yes, you can use coconut milk in making this Keto pudding. Coconut milk provides a creamy, rich texture and a milk coconut flavor to the chia pudding. It is a delicious alternative to traditional dairy milk-based chia pudding. Coconut milk is also suitable for individuals who are lactose intolerant. When using coconut milk, choose an unsweetened full-fat variety for the best texture and flavor. Although coconut milk will work just as well in this Keto mint chip chia pudding, it is more likely to go rancid in about 2 days when stored in the fridge. Almond milk is more stable hence a better option.

Can you meal prep this Keto mint chip chia pudding?

Yes, chia pudding is a great meal prep option. It's easy to make in bulk, lasts up to one week in the refrigerator, and can be customized with different flavors and toppings to suit your preferences. For meal prep, prepare this Keto min chip chia pudding according to the recipe's cooking process. Then transfer the chia pudding to an airtight container. Place the chia pudding in the refrigerator overnight to allow the chia seeds to absorb the liquid and thicken the pudding. Then, add your favorite toppings and enjoy!

Can you customize this Keto mint chip chia pudding?

Yes, you can customize this Keto mint chip chia pudding by adjusting the ingredients to your liking. Some ways to customize include adding different nuts and seeds, such as walnuts, almonds, pecans, pumpkin seeds, or sunflower seeds. Adding Keto-friendly cocoa powder is a great way to intensify the chocolate flavor. Lastly, adding different toppings is a nice option to make this Keto mint chip chia pudding more fun and exciting to eat.

Please clarify what is meant by peppermint extract measurement of 1/2 x 1/4 tsp. Do you mean 1/8 teaspoon?

Heat it up in microwave till warm, then refrigerate. That's how I got mine to thicken.

A word of caution - it is very minty! When I make again, I will cut the peppermint way back.

I thought it was very tasty... maybe a little TOO tasty and it came out more like soup. Lol. However, it is something I will attempt again with half the peppermint and double the chia!

I am new to this whole thing, can you tell me how much “1 serving” would be? Would it be 1 cup full?

Hi there, This recipe makes 3 servings, amounting to approx. 1 cup of pudding. 1 serving is approx. 1/3 cup. A more accurate serving size would be to measure by weight, which is 71g per serving. You can view this information on the nutrition label below the comments. Hope this helps!

I made this today, really satisfying. I added the green food colouring and that made it feel like a mint choc chip dessert!

Tasted good but I never could get it to firm up. It was liquid even though I tried to thicken.

Try doing it just like the breakfast version. Microwave for 45 secs and mix it for 45 secs. Do that about 4 times and it would be nice and firm in the morning.
