Another American Midwest delight is totally keto and delicious in its own right! Juicy beef patties are smothered in a drippy mushroom gravy made from scratch. Plenty of worcestershire sauce flavors all components of the dish, as well as a little parsley. Serve with keto cauliflower mashed potatoes to soak up all that deep brown gravy!

Recipe Steps

  • Step 1

    In a bowl, combine the first 9 ingredients together to form the salisbury steak patties.

    Divide the mixture into 4 sections and build 4 patties about ½-inch thick with your hands. They don’t have to be shaped perfectly, but ovals or circles are good.

    Heat the olive oil in a large pan over high heat and place in the patties. Cook the patties for 4-5 minutes per side until they are completely cooked through and both sides are browned well. For the first 3 minutes of cooking, you can place a lid over the patties to trap steam and make more tender patties.

    When done, transfer the patties to a clean plate to rest. Then, melt butter in the pan over very low heat to deglaze the pan. Toss in minced garlic and the xanthan gum, and use a fork to quickly whisk the ingredients together in the butter.

    Pour the water and worcestershire into the pan, and turn the heat up to a medium-low (enough for a low simmer). Toss in sliced mushrooms and condensed beef broth. Place the lid on the pan and simmer the ingredients very gently for 4 minutes.

    Finally, stir the remaining salt and pepper into the mushroom gravy. Place the 4 salisbury steak patties in the sauce. Return the lid, and let all the ingredients warm up together for 2-3 minutes. You may gently spoon the gravy over the patties to help them gather the flavors of the gravy.

    Serve hot! You may garnish with fresh or dried parsley at your discretion. Enjoy!

    Amazing. Really delicious. I used a beef stock cube and 1 & 1/2 cups of water for the gravy, instead of 1/2 cup of beef stock and an extra 1/2 cup water. I only used 1/4 tsp of pepper in the gravy & omitted the salt because I used the stock cube.

              Usually its in the diary section with the cheeses but some store also have specialty areas near the deli as well.

            Excellent flavor but I would find a substitute for xanthan gum also. Someone suggested cream cheese, I’ll try that next time.

                          I know brown gravy isn't typically creamy, like with milk or cream, but do you think I could use heavy cream to thicken? I can't find xanthan gum.

                            Can you find guar gum or glucomannan? Either of those will work, too. Bob's Red Mill has both Xanthan and Guar gums, usually in the "health food" aisle in the store.

                            Xanthan gum is also found in the gluten free section as well. Check that out in your local grocery store.

                          Very good. I was surprised by the amount of mustard powder, but then remembered that it is a binder. Didnt miss the typical bread crumbs at all. I didnt have the thickener, so I omitted the water and added about 2 oz of cream cheese, simmer to reduce liquid. It worked beautifully! Will make again!

                              Yes I use arrowroot. It’s an equivalent to xanthum gum since you only use small amounts in this recipe.
