This recipe is a great way to start your morning off with a healthy keto breakfast! However, it also works as a lunch or a filling snack. Most of your fat macros will come from the bacon, but some extra help from colby jack cheese and avocado is there too!

Ingredients

  • Avocado

  • Bacon

    Bacon

    2 slice - 6" long

  • Hard Boiled Egg

    Hard Boiled Egg

  • Black Pepper

    Black Pepper

    ¼ teaspoon

  • Colby Jack Cheese

    Colby Jack Cheese

    ¼ cup, shredded

  • Step 1

    Preheat an oven to 350 degrees and line a sheet tray with parchment paper. Cut a large avocado in half, remove the pit and skins, and place both halves down on your sheet tray. Slice 4 slices into each avocado half, leaving the slices attached at the narrow end.

    Slice 2 hard boiled eggs into 4 pieces each. Cut 2 long pieces of cooked bacon into 4 pieces each as well.

    Arrange 1 slice of egg and 1 piece of bacon inside each avocado slice. Sprinkle the pepper over the top of each avocado half.

    Sprinkle the cheese over the tops and bake for 5-6 minutes. Enjoy while hot and the cheese is gooey!

                  You can buy hard boiled eggs (or make a batch in advance) and fry the bacon while your oven is pre-heating.

                  If you already have the ingredients pre-made it’s a breeze! I always have these ingredients on hand...it’s bacon, egg, avocado and cheese, you can’t go wrong
