This creamy Keto tomato soup is rich with flavor and Keto friendly fats. This quick and easy soup makes a great lunch or dinner option, and with a hint of Mediterranean herbs, we think this works just as well as a summer or winter dish! Ideal for batch cooking weekday meals that the whole family can enjoy.

Soup can make an excellent addition to your Keto diet plan. Simple to prepare and quick to cook, soups are a great choice when you are short on time and only have the essentials and pantry staples to hand. To ensure soup is Keto compliant, low carb vegetables and Keto friendly fats are the key. This can also be combined with a source of protein if desired. We have used tomatoes in our soup. Enough to provide flavor, but less than a typical tomato soup recipe. This helps keep the carb count down. We have also stirred heavy cream into our tomato soup to give extra richness and provide a hearty helping of fats.

Serving Suggestions

This warming Keto tomato soup makes a hearty lunch or light dinner option. Perfect served with sliced or toasted Keto bread for dipping. If you would like to batch cook the soup for meals throughout the week, you can prepare the soup as per the instructions until blended. Then simply reheat the soup and add the cream and basil fresh, as and when you are ready to serve.

  • Step 1

    Add the olive oil to a large saucepan over a low/medium heat. Thinly slice the onion and finely chop the garlic. Add to the saucepan with the oil. Sweat the onion and garlic gently for a few minutes until tender and fragrant.

    Roughly chop the tomatoes and remove the seeds. Add the chopped, deseeded tomatoes to the saucepan along with the softened garlic and onion. Add the dried basil and stir well to combine. Cook the tomatoes gently for 1-2 minutes to just soften.

    Add the vegetable stock to the saucepan. Stir to combine. Bring up to a gentle boil then reduce to a simmer. Simmer for 6-7 minutes until the tomatoes are tender. You may add salt and pepper to the soup if desired. This will depend on the level of seasoning in your stock.

    Remove the soup from the heat. Carefully use a hand-held stick blender to blend the soup until completely smooth. Alternatively, allow the soup to cool a little and transfer to a free-standing blender to mix. Do not put boiling hot soup directly in the blender. Return the soup to the saucepan over a gentle heat and stir through the heavy cream. Divide the soup into four serving bowls and top with chopped fresh basil to serve.
