Low Carb Vanilla Dream Mug Cake

What’s in the mug cake
This Keto mug cake is made with coconut flour, almond butter, almond milk, and eggs. Liquid stevia drops are used to sweeten the recipe, which adds zero carbs to your breakfast. Although strawberries are in the final photo, they are not included in your ingredients list. Add any strawberries or other berries at your discretion to your food log.
Coconut flour substitute
The best substitution for coconut flour is almond flour. Substitute the coconut flour for almond flour in a 1:3 ratio. So for this recipe, you would substitute the coconut flour for 6 tablespoons of almond flour. You can also use a paleo baking mix in place of coconut flour. These flour substitutions can be found in the gluten-free section at your grocery store or in the specialty section of the baking aisle.
What heat should I cook the mug cake at?
If you’re using a microwave, cook the mug cake at high heat. If you’re using a toaster oven, you can cook the mug cake at 350 F (180 C). Remember, you may want to divide the cooking time into sections, and check on the mug cake in between. You can adjust your cooking heat or time as needed.

In a 16oz microwave-safe mug, add the almond butter, eggs, almond milk, and stevia. Whisk the ingredients for about one minute until totally mixed. You can mix these ingredients in a separate mixing bowl if that’s easier.Step 2
Next, add coconut flour, baking powder, and cinnamon to the mug. Whisk the ingredients until they’re totally combined. It will be a thick liquid consistency that fills your mug about halfway, which will rise in the microwave.Step 3
Microwave the mug for two minutes. It’s best to microwave for one minute at a time so you don’t overheat your mug. If you choose to use a toaster oven, bake for 10 minutes.Step 4
Your cake is done when you can stick a fork in the cake and the fork appears clean afterward. You can optionally add a low-carb fruit, like strawberries. Enjoy while warm!

Read the reviews and made some adjustments. I used butter instead of. Almond butter, I didn't add cinnamon and added some vanilla. The rest was the same. Very blah and too much. Won't be making this one again.

Substituted almond flour. Bland, dry, and pretty dense. I’d suggest making bread with this recipe and skip the mug.

I made mine in a small pyrex bowl. I didn't have the stevia liquid, so I used some swerve and a teaspoon of monk fruit. Next time I'll add a little more. It's very good.

I made this for a second time and used baking soda instead of baking powder, as it says in the instructions (not ingredients list) and it was much better. Topped with some calorie free syrup, it was quite good.

Made this with jiffy naturals peanut butter. Tastes good, but needs more flavor. It made a small load of about 8 slices. Topped with a couple sliced strwberries n cream cheese.

I used Peanut butter because I didn’t have almond butter and I used almond milk because I didn’t have coconut milk and I put blackberries on it then I covered the whole thing with heavy whipping cream after it was cooked and it was delicious

I'm new to Carb Manager. I made this bread this morning. I stuck to the recipe. I liked it. I cut two slices off and ate it with some strawberries. I like that I can make it in advance and bring a couple of slices with me to the office. I will continue to pick this option in my food plan.

I made this bread this morning but after reading the reviews i twiked it a little. I added 1/4 t of baking soda, omitted the cinnamon and added 1/2 t vanilla. I also added 6 more drops of stevia liquid. It came out liquidy so i poured on a 1 1/4 cup size, half of the mixture and the rest on a 2 cup size Pyrex small bowl. It came out spongy and it gave me 5 bread size slices. I served it like pancakes with s-f syrup and whipping cream, didn’t have fruit. I just ate 2 slices, i was full. Tomorrow I’ll toast it and eat it with butter and s-f jam. Next time I’ll add 1/4 t each of baking powder and baking soda and if i want to eat it with food I’ll omit the liquid stevia and the vanilla. It’s a keeper! I loved it. Thank you so much for this recipe. Five stars.

I added 1/4 teaspoon of vanilla, used only 1/2 teaspoon of cinnamon and added a handful of blueberries before microwaving. Added 45 seconds to the microwave time due to the moisture in blueberries. Added 2 tablespoons of sugar free syrup before eating. Finished every spoonful feeling full and satisfied

After reading all the reviews first, I was hoping for the best but expecting the worst. Turns out, I was pleasantly surprised. It's not nearly as bland, dry or dense as others found it to be. (Obviously, this is totally subjective.) Also, I drizzled two tablespoons of keto pancake syrup and that was a nice blend of flavors. I didn't find the mug cake to be overly doughy either. But I do agree with one reviewer. It kinda does remind me of wet pate cat food. lol

I agree it was super dry. I sliced it and treated it as a pancake with butter, sugar free syrup and fruit. I was only able to eat half as it was filling. both my husband and I enjoyed it this way.

Very dense. Would definitely add more sugar and some vanilla. I sliced and toasted with butter. Definitely better. Next time I may slice and make French toast with it.

This recipes needs some major tweaking.... Idk how it made it on here. I did the recipe exactly as put and then I added more sugar. Used vanilla in it and also unsweetened vanilla almond milk. Eased up on the cinnamon. also used a bowl instead of a mug so the berries I used I could actually have a little bit in every bite because the mugs I have just are those tall skinny type. It was better with the tweaks

I just ate half of this and am full. I topped it off with fresh raspberries and berries and added a pat of butter because on first bite, the “cake” was pretty bland and I thought the butter would help. My verdict is the second half is going in the trash. I tried mashing it up with the fruits and that didn’t help. It just made it look more like wet cat food out of the can. I used chunky almond butter and unsweetened Macadamia nut milk and it tasted like dry, unsalted peanuts. I think the title is deceiving because there was no vanilla anywhere and it might have actually made a positive difference. With some serious ingredient modifications, perhaps this could make a decent pancake or French toast. Overall, I would vote this recipe off the keto menu list permanently.

Must say didn't even sound good., but came up on my meal planner so i gave a whirl. Very dry and bland but best bread I've tried so far. I substuted natural peanut butter and sliced then added more cinnamon and butter. They do taste alot like pancakes going to try pumpkin next time with cream cheese and cinnamon on top.

This wasn't bad. I may switch to baking soda next time instead of powder... might change texture. Since it was listed both ways, just took a chance on the powder. Also added a little vanilla.
