Low Carb Butternut Squash Breakfast Hash

20 ratings

If you’re looking for an indulgent and absolutely scrumptious breakfast, you can’t pass up this recipe. This breakfast hash has slightly sweet butternut squash, loads of protein from sausage and bacon, and a peppery, spicy finish from extra vegetables. Diet or no diet, the rest of your family will love it too. Otherwise, there’s plenty in one recipe to enjoy for yourself through the week!

Unfortunately I didn’t have all the ingredients listed in the recipe, so I substituted grass fed ground beef for the sausage and didn’t add the bacon. I’m sure those items would make it taste even more yummy than it did. I enjoy a mixture of foods like this and my daughters liked it as well. Will make again.

Tastes really good. Instructions don’t say when to put garlic in. I think next time I will cook meats then add veg and garlic then squash- may get crispier meats without risking burning squash but I fixed it with more butter and removing from heat a bit and little bit. of water. Also I used frozen squash so that may have been the difference too.

I’m not a fan of sausage, but I did use ground pork and flavored it a bit with garlic and onion powder, salt, pepper, paprika, oregano, and cayenne pepper. I added mushroom to the mix as well as did two extra cloves of garlic (we loooove garlic). Everything else I followed to a T. This was incredibly good. I loved it! Lasted me four breakfasts! This is a keeper.

Yum! As I didn’t have any peppers I threw in some mushrooms. Very versatile recipe. Definitely will make again.

would chorizo work well with this recipe instead of pork sausage?

What meat can I swap in place of the pork and bacon?

                      Chicken/turkey sausage or turkey bacon

Since the pork products are very high in fat, there is not other non-pork meat option that will directly replace. However, ground beef or ground turkey would be very suitable to maintain the protein and flavors of the dish. You may want to add some melted cheese or another product with high fat to maintain the macros of this meal. Hope this helps!

This is my family and I favorite new breakfast for sunday's I use less onion and peppers and add cayane pepper. Same kick without the heartburn from the peppers and onions that my husband gets. Absolutely love this ❤️

I’m s but confused by the portion. If this recipe makes 4 servings, 1 serving is very small. That would only be 1/4 of the sausage for example

Yes! In the keto diet, protein is usually kept around 20% or less of total daily macros. At your discretion, you may add more protein to fit your preferences and lifestyle, but you will need to add the additional nutrition to your log so it is accurate.

I actually used mild Italian sausage, because that's what I had handy. It turned out great.

I cooked bacon early, cooked sausage separately, through veggies (1/2 jalepeno) into squash with a touch of bacon grease and browned. Then simmered it all together. Turned out perfect!

I will cook the meat separately next time. It was a nice change though.
