Low Carb Cabbage And Bacon Gratin
This low carb gratin is packed with tender cabbage, crispy bacon and a creamy cheese sauce, baked until oozy and golden.
This makes for a great accompaniment to a Sunday roast chicken!

Ingredients
Bacon
4 slice - 6" long
Heavy Cream
2 tablespoon
Parmesan Cheese
2 tablespoon, grated
Cream Cheese Spread
2 tablespoon
Cheddar Cheese
1 cup, grated
Olive Oil
1 tablespoon
Cabbage
1 medium - head - approx 5 3/4" diameter
Garlic
1 clove
Unsalted Butter
1 tablespoon
Vegetable Broth, Bouillon Or Consomme
½ cup
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Chop the cabbage into half inch strips and add to a pan of boiling water. Cook for 3-4 minutes or until tender and almost cooked through. Drain and set aside.Step 2
Preheat the oven to 400 degrees Fahrenheit.Step 3
Heat the oil in a skillet over a medium heat and add the bacon. Cook until crisp and golden brown all over. Remove from the pan with a slotted spoon and set aside.Step 4
To prepare the cheese sauce, melt the butter in a small pan over a low heat. Mince the garlic and add to the pan, sweating gently until tender.Step 5
Add the cream cheese, Parmesan, stock and cream. Bring to a simmer and cook gently for a minute or two until you have a thick and creamy sauce.Step 6
Arrange the cooked cabbage across a sheet pan. Crumble the cooked bacon over the cabbage and season with a little salt and pepper.Step 7
Spoon the cheese sauce over the cabbage and bacon and sprinkle over the cheddar cheese.Step 8
Transfer to the oven to bake for 18 minutes or until hot through and golden brown all over.

I'll try this tonight with coconut fat chopped cabbage, onion and garlic and maybe coconut milk, would love to hear any decent non dairy substitutes

I love these recipes but so many of them have high dairy content, finding a decent, cookable low carb cheese that is palatable and affordable is really challenging I would lLOVE it if carb manager gave us more dairy free recipes and options

Sounds good but your serving size seems off 0.1oz? With 6 servings from 30oz cabbage?umm… I make that at least 5 oz per serving..probably more like 6.5oz- which means your macros are def incorrect- somebody tell me if I’m wrong?

At 4 grams (!!!) per serving there's no way the serving size is right!!! Since the CM recipe writer seems not to have checked back in yet, probably the best bet is to portion out 6 servings, using your kitchen scale to ensure the portions are equal, and go from there. Copy the recipe to My Foods and adjust

Really like this! Used sausage instead of bacon. Cooked cabbage in pan with sausage 1st.

This is great i put chicken in it. Cooked it on top of the stove and put a lid on it to melt the cheese.
