  • Step 1

    Roughly dice the pepper, onion and tomato and thinly slice the garlic. Heat the oil in a skillet over a low/medium heat and add the onion, pepper, tomato and tomato paste. Stir to combine and cook gently for 2-3 minutes to soften, then add the garlic and cook for a minute more.

    Add the cauliflower rice, paprika, cayenne, coriander and stock. Stir to combine. Bring to a simmer for 3-4 minutes or until the rice is hot through and the liquid has all been absorbed.
