These delicious Keto summer chicken skewers are basted in a zesty marinade then oven baked. This is a simple to prepare summer recipe, full of flavor from just a few ingredients. These make a great dinner or lunch option.

Keto Summer Chicken Skewer Ingredients

Diced chicken pieces are coated in a marinade of earthy tahini, citrusy lemon, aromatic garlic and extra virgin olive oil. Once marinated the chicken pieces are threaded onto wooden skewers to be oven baked. The recipe calls for diced chicken breast but this would be just as delicious with chicken thigh pieces.

Serving Suggestion

These Keto summer skewers are perfect served with a hearty low carb salad. Although we have oven baked our chicken, this is a great option griddled over a Keto BBQ. Perfect for summer dining!

  • Step 1

    Select 4 wooden or bamboo kebab skewers. Submerge the skewers in water and leave to soak whilst you prepare the chicken. If you are BBQing the meat you can use metal skewers if preferred. Add the tahini to a small mixing bowl with the lemon juice, olive oil and salt. Crush 1 large garlic clove. Add the crushed garlic to the tahini mixture and whisk everything together to combine.

    Add the diced chicken pieces to a mixing bowl. Spoon the tahini marinade over the chicken. Use your hands to massage the marinade into the chicken pieces so that they are all evenly coated. Cover and refrigerate for 30 minutes to allow the chicken to marinade in the flavorings.

    After this time, remove the chicken from the fridge. Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper. Thread the prepared skewers with the marinated chicken pieces, dividing the meat evenly between the four skewers. Arrange the skewers across the lined oven tray.

    Transfer the tray to the oven. Bake for 18-20 minutes until completely cooked through. Timing may vary slightly depending on how large your diced chicken pieces are. Serve hot or cold.

        What is tahini and where would I buy it? I looked online but just got more confused 🙂

          Tahini is sesame paste. If your supermarket has a Mediterranean section, you can find it there. Sahadi brand is really good.
