Ingredients

  • Organic Coconut Oil

  • Creamed Coconut by Ktc

  • Desiccated Unsweetened Coconut by Compass

  • Xylitol Sweetener

Recipe Steps

  • Step 1

    Add the creamed coconut, coconut oil, vanilla, xylitol and 2/3 cup of desiccated coconut to a food processor and blend on a high-speed setting until you have a thick liquid consistency. This will be relatively smooth but will still retain some crunch from the coconut.

    Pour the coconut mixture into a small shallow dish or mould approximately 3 x 6 inches and sprinkle the remaining desiccated coconut over the top, pressing down gently.

    Transfer the dish to the freezer and allow the mixture to firm and set for 20-30 minutes.

    Slice the coconut ice into individual slices or squares for serving.

              Sure it looks delicious, but it's too bad that it doesn't have a proper servings size like a keto dieet needs.

                You can make it any serving size you want. See the ‘+’ and ‘—‘ signs next to the serving size? You can increase and decrease serving and make the amount you want. It’s too bad you didn’t see that for yourself.

              I made this & cut it into small pieces not thinking about how I was going to count it? Does anyone know what weight a serving would be?

                If you make it for 8 servings you then cut it into 8 pieces. If you adjust serving size at the top of the recipe, which will adjust the ingredient amounts, then you just cut it into the number of pieces that correspond DHS to the servings you made.

                I would say, next time just divide it into 8 squares. And then from there you can do bite size pieces

                Can coconut butter be subbed for coconut cream? Can another natural sweetener be subbed, like liquid monk fruit? What size square is one serving according to the nutritional info?

                    Coconut oil will harden above room temp, so I think fridge would be fine.

                    How can u edit a meal plan recipe ex if i use mayo instead of mustard how do u rake an ingredient out and put one in ?

                    I was going to exclude the sweetener or use a little melted monk fruit or even use lemon juice instead.
