Step 1
Add the eggs to a mixing bowl with the salt, pepper and chili flakes. Beat together to combine.Step 2
Slice the scallions. Heat the oil in a skillet over a medium/high heat. Add the ground pork and scallions. Stir well and cook the pork through completely.Step 3
Add the beaten egg and allow it to settle in the pan for a moment. Scramble with a wooden spoon and continue to cook to preference.Step 4
Scatter with fresh chopped cilantro to serve.

Cooking for 1, so this actually made me 4 servings instead of 2. Good hearty portions and so easy to make! Delish!

It is tasty but I found the portions small, I did stick to the portions suggested but let’s just say I was still hungry, lol
