Ingredients

  • Bell Pepper

  • Basil Fresh

  • Asiago Cheese

  • Step 1

    Cut the ends off your bell pepper and cut them into large slices. Peel and crush 3-4 cloves of garlic. Meanwhile, heat the olive oil in a large iron skillet over medium-high heat.

    When the skillet is ready, toss in the peppers and garlic. Let them roast in the pan until all sides are golden brown. Transfer the peppers and garlic to a bowl for later use and turn the heat off the skillet.

    Prepare the chicken breast by butterflying two chicken breasts. Pound the chicken flat to a ¼ inch thickness and slice the breasts into four equal pieces. Sprinkle the salt, pepper, and oregano over across them.

    Preheat an oven to 350 degrees. On the stove, heat the skillet back to medium heat, and place in the chicken breasts. Cook the chicken about 4 minutes per side, or until the breast are golden brown and cooked through.

    Once the chicken is done, turn off the stove. Place the cooked peppers and garlic around the chicken. Roughly chop the basil and sprinkle this over the skillet. Distribute the asiago cheese over the skillet as well.

    Bake the skillet in the oven for about 10 minutes, or until the asiago cheese is completely melty and gooey.

    I’m confused… wouldn’t this be a total net carb of 2? 3 total carb minus 1 g fiber =2 net carbs?

    I’m not the cook of the year, but I find thin chicken breast to be dry. I’d like to try it with boneless chicken thighs.

      I am currently making it with thighs. My husband and I are having it with a side of asparagus while for my teenager I am turning it into a sandwich.

      Simple, really juicy & very tasty. Not at all dry if you cook it for an appropriate amount of time on the stove & in the oven.

          This is my favorite recipie so far. I love the simplicity and the flavor of this recipie. I usually make it a meal plan meal. So I prepare all of my ingredients separately (roast the garlic, oven roast the pepers and pan sear the chicken) top it with roasted garlic cloves, a pepper 1/2 and pepper jack cheese then melt in the oven. Soooo good. I wish could upload a pic.

            I agree it was a little dry. Maybe add a few chopped tomatoes but over it came together quickly and was good.

              I enjoyed this and used mozzarella instead of asiago cheese. Very easy and filling but a little dry. Serve with aioli.

                    This is a staple dinner for me!!! I replace the cheese with pepper jack and use 2ounces over all cut pieces!!!!! Soooooooo delicious!!!!!

                          I changed this up a little just so I didn’t have to go shopping. I put Italian seasoning on the chicken and I used mozzarella cheese instead. It was so good and my daughter asked for seconds. Thanks for the recipe we will make this a monthly go to. 😋

                              Was great! Cooked as directed except for Oregano because I forgot. Lol but it was delicious. My 8 year old daughter and husband enjoyed it as well. She didn’t eat the peppers which I thought was definitely the star on the plate. Quick and simple will make Again. I made French green beans to go along with it. Yum

                                Made this last night. I'm not a great cook at all but this was simple. It's probably the best thing I've ever made LOL. My daughter loved it as well. We will definitely be having this again for dinner!

                                      Made this tonight. Added 1Tb of Heavy Cream the last 2-3 minutes while cooking the chicken. Added some fat that I needed on the day. Also used mozzarella cheese in lieu of the Asiago. Everyone loved it. Full of flavor.

                                            I absolutely love this recipe. I use Italian instead of oregano, mozza cheese instead of asiago and add feta. Oml it's good as heck. I also don't think it's necessary to put the pan in the oven, just use a lid on low heat and it'll melt the cheese just fine.
