Coconut Flour by Bob's Red Mill
¾ cup
Baking Powder
3 teaspoon
Kosher Salt by No Name
⅛ tsp
Coconut Oil
6 tablespoon

Step 1
Preheat an oven to 350 F. Line a muffin pan with 9 silicone or paper liners. In a food processor, combine the coconut flour, baking powder, kosher salt and coconut oil until well blended.Step 2
Add the eggs and blended well. The mixture will thicken more in the next few minutes so be sure to allow it to stand before scooping into liners.Step 3
Divide the batter between the 9 liners, filling them about ¾ of the way full. Bake for 16-18 minutes or until the tops are slightly browned and spring back to the touch.

I added a banana and it was good. I also had butter with it. Anything could be added to it for more flavor but I liked it....

Found this made for a very dry muffin. If you have the fat allowance, you might want to have this with butter or the like. Hope my husband's life insurance is up to date, as he chokes one down across from me.
