Keto Salmon California Rolls
This is very easy to make if you have a sushi bamboo mat which you can find at almost any Asian market and they cost next to nothing. I wrap mine in plastic wrap to make sure it stays clean and then I throw the wrap away when it gets messy! You can cook the salmon any way you please, but I used the microwave for a super easy cook and then crumbled the salmon into the roll. The trick to the rolls is to make sure you roll it very tight and keep it round by using the mat. If the mat looks round as it’s wrapping around the roll it will look great!

Ingredients
Cauliflower Rice
12 ounce
Cream Cheese
3 ounce
Apple Cider Vinegar
1 teaspoon
Kosher Salt
½ teaspoon
Salmon
8 ounce
Kosher Salt
½ teaspoon
Red Bell Pepper
¼ medium
Cucumber
⅛ large

Step 1
Heat the cauliflower rice in the microwave from frozen following package directions. Heat cream cheese in a small bowl on HIGH for 15 seconds until very soft. Combine in with the cauliflower rice adding in apple cider vinegar and ½ t kosher salt. Mix well.Step 2
Cook salmon any way you prefer. For this I used the microwave sprinkling ¼ t kosher salt on the fish before cooking. I microwaved the salmon on HIGH for 1 ½ minutes adding 15 second increments until the fish is cooked and reaches 145 F.Step 3
Take a sushi bamboo mat and cover it with plastic wrap. Place a sheet of nori on top with ¼ of the cauliflower rice. Spread into a thin layer.Step 4
Top with ¼ of cooked salmon a couple pieces of bell pepper, cucumber and avocado. You don’t need much because you want it to roll nicely.Step 5
Roll up the bamboo mat squeezing each section, then rolling a little more and squeezing it again into a roll to ensure that it’s tight.Step 6
It should look like this, nice and tight.Step 7
Cut the ends of each roll and cut each with a very sharp knife into 6 pieces.

Loved this. It was easy to make ( I’ve never made sushi before) and really good. I did make a wasabi and siracha Mayo to go with it which made them even better. Unfortunately, they don’t keep as leftovers so either make less or make sure they get eaten. The Nori becomes sort of slimy overnight in the fridge!

How many nori sheets do you need. I can’t see them in the ingredients. Also is a serve a whole sliced log or just one of the wheels after slicing?

You will need 4 nori sheets to make 4 rolls. One serving is one roll cut into slices. I hope that helps clarify!

I did something similar before I saw this recipe. I spread whipped cream cheese on the nori, then smoked salmon and avocado. I then rolled it up and cut my slices. This way cuts most of the carbs out as well. I look forward to trying this recipe!

Tried this recipe and now it is my favourite! A sure to be hit at potlucks. For those who are not low carb they would be hard pressed to taste the difference!
