Keto Garlicky Sumac Fried Eggs and Spinach

I love eggs and spinach for breakfast because it is filling and gets me off to a nutritional start. Slices of garlic are sauteed until brown then the eggs are fried in the garlicky olive oil. Any residual oil helps to cook the spinach until wilted. Then the eggs are sprinkled with sumac.

Disclaimer: Salt and pepper are pantry staple ingredients, thus not counted as part of the 5-ingredients.

  • Step 1

    Over medium-high heat, heat a small nonstick skillet until hot. Add the olive oil, swirl the pan and add sliced garlic.

    Turn heat down to low and cook garlic until it turns golden brown about 1 minute.

    Remove the garlic with a slotted spoon. In the remaining hot oil, crack the eggs into the pan and cook for 30 seconds or so. Top the pan with a lid and cook for an additional minute or so until the whites are opaque, but the centers are still runny. Feel free to pop the yolks to make fried eggs instead.

    Remove the eggs to a plate and add the spinach. Add a pinch of salt to the spinach. Cook until wilted.

    Plate the spinach.

    Top with the fried eggs, sprinkle on the sumac and enjoy.

    Really good! I used lemon juice as I didn't have Sumac and it all worked. Will make again.

      Delicious and filling! (BTW, I found sumac in a Mediterranean grocer in town.)

        Was very good but I couldn’t fine sumac anywhere. I saw someone used lemon juice and it was very good! I also sautéed the spinach and garlic together and it was delicious!

          I couldn't find sumac in the store so I used lemon juice. HOLY CRAP SUCH GOOD EGGS. Eggs can get really predictable and boring but i will be making these a lot kore often cause this is amazing and doesn't taste like your ordinary eggs!!! Sooo sooo good. You won't regret trying this recipe

            Soooo good never had sumac before and it made the eggs so different! I love garlic and this was perfect!
