Keto Chocolate Pudding For One

Sometimes I get a sweet tooth and when I do I reach for chocolate. This chocolate pudding is so rich and decadent without all the carbs. It’s creamy, filling and super satisfying. I hope you enjoy it as much as I do. A hint of coffee is used too to make it extra special, but feel free to leave it out. Use a dark cocoa powder to get a very deep chocolate flavor.

  • Step 1

    Add coconut milk and cocoa powder to a small saucepan and heat until chocolate melts.

    In a blender safe container, add the coconut milk mixture, avocado, Pyure and instant coffee. Blend until smooth. Serve with grated 85% dark chocolate on top!

          Needs something. Made into a smoothie with almond milk and extra chocolate , vanilla , stevia and salt. Invented a pretty good smoothie from this.

            I made chocolate puffing with instant pudding mix, but instead of milk I added a cup and half of heavy whipping cream and a cup and half of water. Mix well and put in the fridge for about an hour. Makes 6 servings and is delicious.

              I added a couple more drops of vanilla cream stevia, a tbs of swerve confectioners sugar and a tbs of swerve brown sugar and a tbs of 72% Cocao chips... yummy!!

                Tasted okay but I ended up adding several more drops of vanilla creme flavored liquid stevia. Not the best chocolate keto pudding.

                    Can I use carob powder since I'm allergic to chocolate? How will I dissolve the carob powder to mix it well?

                      I would say follow the same instructions as for chocolate. If you use a stick blender or food processor the powder will incorporate in a similar way. I hope this works for you!

                    Anyone try erythritol? Not a stevia fan.... but vanilla and cinnamon definitely sounds good with this!

                      Erythritol would work very very well! Just add it to taste. If I were to guess I would add 2-3 T of powdered erythritol to this recipe.

                      In step 2 it says “...add Pyure”. I have no idea what that is & it’s not listed in the ingredients?

                      I agree. Missing something. But I was craving something sweet and quick. I don't really like it but I think it may be better really cold. I will try it again that way.

                        I really WANT to like this, but there's something missing. I'm a fan of avocado ice cream, so it's not that it's made with avocados, but it's definitely missing something.

                          Try just a tiny pinch of salt.. That usually enhances the flavors.
