Ingredients

  • Avocado

    Avocado

  • Canned Tuna

    Canned Tuna

  • Scallions

    Scallions

    2 small - 3" long

  • Mayonnaise

    Mayonnaise

    1 tablespoon

  • Lime Juice, Fresh

    Lime Juice, Fresh

    1 teaspoon

  • Cilantro

    Cilantro

    1 tablespoon, chopped

  • Salt, Sea Salt

    Salt, Sea Salt

    ¼ teaspoon

  • Black Pepper

    Black Pepper

    ⅛ teaspoon

  • Step 1

    Slice the avocado in half lengthways, and remove the stone from the center.
    Step 1

    Finely slice the scallion and add to a mixing bowl along with the tuna, mayonnaise, lime juice, cilantro, salt and pepper. Mix well to combine.

    To serve, divide the tuna mayo evenly between the two avocado halves.

                            Spoiler alert. I don't like chicken or avocados. Oddly I love Avacado Mayo, avacado oil, Earth Balance Avacado Spread & I'll use pre-mashed & seasoned Avacado cups for recipes that NEED mashed avacado. I've heard orhers claim avocados are slimy with a bad taste. DITTO. I tolerate an occasional chicken salad. Am I alone?

                              I can't stand avo BUT I just tried this recipe with a screwed up face with the first mouthful and after that Boom I loved every bit of it, all finished and will definitely make it again 😁👍
