Ingredients

  • Salami, Cotto (cooked Or Soft), Beef And Pork

    Salami, Cotto (cooked Or Soft), Beef And Pork

    6 slice - 4" diameter x 1/8" - each 0.8 ounce

  • Dill Pickles

    Dill Pickles

    6 small - approx 2" long

  • Cream Cheese Spread

    Cream Cheese Spread

    2 tablespoon

  • Lemon Juice

    Lemon Juice

    2 teaspoon

  • Dill Weed, Fresh

    Dill Weed, Fresh

    1 tablespoon

  • Cucumber

    Cucumber

    ¼ medium

  • Black Pepper

    Black Pepper

    ⅛ teaspoon

Recipe Steps

  • Step 1

    Finely chop the dill and add to a mixing bowl along with the cream cheese, lemon juice, salt and pepper. Stir well to combine.

    Arrange the 6 salami pieces and peel 6 wide strips from the cucumber. Layer the cucumber down the center of each salami slice.

    Dividing evenly between the 6, spoon the cream cheese along the center of each cucumber slice.

    Place one small dill pickle in the center of each.

    Fold the edges of the salami up around the filling so that it overlaps and seals to form a tight roll. Refrigerate until ready to serve.

    I actually just took salami, added cream cheese spread and then a dill pickle spear slice and rolled it up. A zillion times easier and so good!!!

        Hormel makes a salami that Smart and Final carries in a large pack at least in Southern California. It has no sugar, no powdered milk and no carbs.

                Can you change the whole pickle for a pickle slice? And instead of dill can we add everything bagel seasoning?

                  I made these today and I really like them. I used the smaller size salami because that’s what had. I made a slight error in the assembly method. I added the chopped pickles to the cream cheese and seasoning mixture. Still tasted great. Personally, I won’t be adding salt next time but I will make them again.

                    All I have is pepperoni. I wonder if the calculations would be the same. I’d make them bite sized, and not roll them.

                  Can anyone tell me what constitutes a serving? It seems to read that 1 roll is a serving, but want to make sure.

                    I think a serving size is 6...because salami has a serving size of 6 (if you look that up) it all gets very confusing and I'm new at Keto.

                    This has been a favorite snack of my long before Keto. I just use wax peppers and cream cheese. Today I added sun dried tomatoes just to mix it up a bit
