  • Cauliflower Rice

  • Coconut Oil

    Coconut Oil

  • Shallots

    Shallots

    1 tbsp, chopped

  • Green Beans

    Green Beans

    1 ounce

  •  Zucchini

    Zucchini

    1-½ ounce

  • Broccoli

    Broccoli

    1 ounce

  • Salt

    Salt

    ¼ teaspoon

  • Black Pepper

    Black Pepper

    ⅛ tsp

Recipe Steps

  • Step 1

    Finely dice the shallot. Dice the zucchini, broccoli and green beans into one inch pieces and set aside.

    Add the cauliflower rice to a large pan with 1 tablespoon of water over a low/ medium heat and fry gently for 2-3 minutes. Remove and reserve to one side.

    Heat one tablespoon of coconut oil in the pan and add the diced green beans, broccoli, shallot and zucchini. Fry gently for 3-4 minutes until tender.

    While the vegetables are cooking, beat the eggs together and season with salt and pepper.

    Add the cauliflower rice back to the pan with the vegetables. Season generously and stir well to combine.

    Make a well in the center of the vegetables and add the remaining coconut oil to heat up. Pour the beaten egg into the well and leave to settle for a minute to start cooking.

    As the egg starts to cook, break it apart with a wooden spatula, mixing into the fried vegetables to combine until completely cooked through.

    Serve as it is or drizzle with soy sauce.

    It has no flavor....added ginger per the comments and even then, it wasn't worth the effort. Sorry charlie...

        Loved this! Added a jalapeño, a quick grate of ginger, half cup of mushrooms and a teaspoon of sesame oil, drizzled with soy sauce. Made two portions and badly wanted to eat the second one too although I was stuffed to the gills I still have eyes are bigger than belly syndrome!! 🤣 Already looking forward to the other portion tomorrow night 😋

            Not a winner, tasteless.. You would need to add seasonings and garlic and ginger perhaps to make edible.

                Wow.. this is so delicious and super easy! I added some additional spices (garlic, Chinese 5 spice, ginger) I loved it and WILL make again! Yum

                  On point! This was delicious! I wish I had soy sauce but even without it I could have eaten all of the servings in one sitting (but I didn’t). I steamed the rice cauliflower in the microwave first, then added it to the skillet after the veggies were cooked and carried the rest of the steps as instructed. Yummy!
