Ingredients

  • Bacon

    Bacon

    2 slice - 6" long

  • Walnuts

    Walnuts

    1 tablespoon, chopped

  • Unsalted Butter

    Unsalted Butter

    1 tablespoon

  • Cream Cheese

    Cream Cheese

    ½ cup

  • Blue Cheese

    Blue Cheese

    ⅓ cup, crumbled

  • Step 1

    Add the bacon to a dry pan over a medium heat and cook through until really crispy. Set aside to cool.

    Whilst the bacon is cooking, add the cream cheese and blue cheese to a mixing bowl with the softened butter. Mash together well to combine.

    Fold the chopped walnuts evenly through the mixture.
    Step 3

    Transfer the mixture to the fridge for an hour or until firm enough to roll.
  • Step 5

    Once firm, divide the cheese mixture evenly into 6 portions and roll into balls with your hands.

    Crumble or roughly chop the crispy bacon into tiny pieces.

    Roll each ball in the bacon crumb.
    Step 7
  • Step 8

    Serve immediately or return to the fridge if they need to firm a little more. Keep in an airtight container in the fridge until ready to serve.

        Well if you like cheese and bacon, then you’ll love these….! Mine remain quite gooey (but nice and a great pick me up if you’re not that hungry but want a pick me up). Has anyone tried putting them in the oven to crisp the cheese up??

                I just made these but did not have time to wait for a snack before work so thought I would share that it also makes a great dip using cucumber slices for dippers! Just take 1/6th of the mixture for the same macros :) super yummy but so simple! Thank you!
