Keto Simple Tomato and Cucumber Salad
This simple tomato and cucumber salad is tossed with aromatic fresh basil, toasted pine nuts, zesty lemon juice and olive oil.

Ingredients
- Pine Nuts - 2 tablespoon, whole pieces 
- Tomato - 1 medium - 2 3/5" diameter 
- Olive Oil - 1 tablespoon 
- Cucumber - ⅓ large - 8 1/4" long 
- Lemon Juice, Fresh - ½ tablespoon 
- Basil, Fresh - ¼ cup, whole pieces 
- Salt, Sea Salt - ¼ teaspoon 
- Black Pepper, Ground - ⅛ teaspoon

- Step 1 Add the pine nuts to a dry skillet over a low/medium heat. Toast gently for 3-4 minutes until lightly golden.
- Step 2 Finely dice the cucumber and tomato and add to a serving bowl. Toss to combine.
- Step 3 Roughly chop the basil and add to the salad. Season to taste and toss to combine.
- Step 4 Scatter the pine nuts over salad.
- Step 5 Whisk together the lemon juice and olive oil and drizzle over the salad to serve.

I added feta cheese thought about using balsamic but figured I’d give this a try. So good either way!

I have no fresh basil. Any suggestion for a substitute?

I substituted for balsamic vinegar. That’s my preference. It’s an extra carb, but it is worth the flavor.

Next to the “1 serving,” by the title, I see 3.7 oz (103.5 g). My assumption is that this is one serving size portion. I just noticed this recently. Knowing a serving size weight is very helpful, if you have a kitchen scale. Less arbitrary than “1 portion” or “1/6 of a recipe.”

I use regular cucumbers. Is there a difference? What do you consider 1 serving. Serving sizes on here are very vague. Plz advise

Am I missing something? The recipe called for just a cucumber. I do know the English cucumber is not seeded.

Yes you can really use any cucumber you want if you look up there nutritional facts their all almost the same. In recipes like this I use the weight amount. 3.53oz or 100g. Most of these recipes if they don't give you a precise measurement they'll give you a weight in ().

Pumpkin and/or sunflower seeds would work well. Slivered toasted almonds or walnuts would be nice also.

Added 1/2 avocado cut in 1" squares and some green onions. Its a great salad.

Does this really call for just 1/3 of a large cucumber?

I measured my English cucumber or some call it a hothouse or burpless cucumber to be a little over 8" long saving the rest about 3-4" left for another recipe. I find two recipes that use cucumbers to not waste them.

I usually add more, as long as you mind your carbs add to your liking. It has a lot of fiber too.
