This Chimichurri Flank Steak recipe gets the perfect char on the outside with a juicy and smoky center. It’s paired with a fresh and tart chimichurri sauce that will have you thinking green! The chimichurri sauce in this recipe is fairly spicy. If you’re not a fan of the heat, simply use half of a serrano pepper (or omit it completely) instead of a whole one.

  • Step 1

    Lay the flank steak out on a flat surface. Rub it down with the olive oil, salt, pepper, chili powder, smoked paprika, and onion powder. Place the steak in a Ziploc bag and allow it to marinate for at least 2 hours. However, it will taste best if marinated overnight.

    To make the chimichurri sauce, combine the cilantro, parsley, oregano, garlic, salt, red onion, and serrano pepper in a food processor. Pulse until you get a chunky and consistent paste.

    Pulse in the olive oil and the juice of one lime. If you’d like the sauce to be thinner, you can blend in water to your preferred consistency.

    Heat a large skillet over high heat. Place the marinated steak on the hot skillet and cook both sides to your preferred doneness. For a medium-rare to medium done steak, about 4-5 minutes per side is needed.

    Allow the cooked flank steak to rest for 5 minutes. Then, slice it into strips and serve with the fresh chimichurri sauce!

    Curious is flank steak tough to chew? If so, how does one prepare it to make it tender?

      Delicious! Will do half a lime for the sauce next time to cut down on the sourness. The whole family loved it (our daughter likes spicy foods though).

        Didn't really like the flavor of the rub and of course it was too spicy for the whole family to enjoy.

          Absolutely delicious. Loved the sauce. Used avocado oil instead of olive as that’s what i had. Also added a smidgen/squirt of mayonnaise and 1/2 package of sweetener. Plan to use sauce as dip for pork rinds snack!

            Very good, could have been better but my wife waited until the last minute to make it. I’m sure marinating overnight would have been better.

            Very tasty. Can't wait to eat again. Think I will take the onion out the sauce next time though. Or use spring onion instead. But tasted amazing :D

              So I am brand new and just starting to explore keto. Looking at this flank steak recipe...do you have anything else with the steak? Is it just the steak you have? Are there any sides that you make with eating a keto diet?

                I love this recipe and actually paid to subscribe for it. I’ve had this with a side of coleslaw or cauliflower rice! I didn’t have flank steak tonight, but I used the rub on a regular steak to have with the chimicurri sauce. I quadruple the recipe as I’ve even used this same recipe with chicken.

Good luck to you as you pursue the keto way of eating! (I've been doing this for nearly 3 years now and don't want to ever go back to the "old" way of eating!)

                If you made the chimichurri in a blender with olive oil, that will make it bitter. Something science-y with olive oil at high speeds. Made this mistake myself once!

              While my mouth felt 🔥 my husband and stepson LOVED this recipe. I loved the flank steak, so if you’re sensitive to spice I’d recommend pausing on the sauce.

                This is one of my favorite meals— I make it once a week. It’s super easy to cook the steak, just make sure you marinate it in advance (I’ve only done it for an hour and it still tastes good). And the chimichurri is easy because you just blend everything in the food processor. Sometimes I make extra because its amazing with eggs the next day for breakfast— in fact the meat tastes way better the next day.

                    Omg. This dish is amazing. I’ve made flank steak before and agree that marinating this would make this dish incredible HOWEVER, I didn’t have the time for all that. Had a hungry family and just let the meat marinate while I made the sauce and trust me, this dish is AMAZING! My husband and daughter said it’s the BEST DISH I HAVE EVER MADE. YOU MUST make this dish.

                      Thanks for the recipe. I’ve never made chimichuri sauce before but it turned out great! I cut back on the heat in the marinade and the sauce, just put enough for the taste but didn’t want it too spicy. Hubby loved the thing!

                        This took longer to prepare than I had hoped but the recipe paid off. This was delicious! The whole family enjoyed it (husband, wife, and 2 boys under 12)
