Step 1
Preheat a broiler to high. Carefully scoop out the mushroom stalk and gills with a teaspoon and discard. Brush with the olive oil and broil for 3-5 minutes or until just tender.Step 2
Divide the grated cheddar cheese between the two mushrooms. Crumble over the blue cheese and sprinkle with the parmesan.Step 3
Return to the broiler for 8-10 minutes or until the mushroom is cooked through and the cheese is bubbling and golden.Step 4
Scatter with the toasted pine nuts and chopped fresh parsley to serve.

How much is one serving? Two mushrooms or one? The recipe says 2 servings at the top and one serving at the bottom.

I think I would weigh the mushrooms and see what 3.2 oz looks like then work backwards using the cheese weight to remove mushrooms from scale. ug.. i hate math lol
