  • Step 1

    Preheat the oven to 400 degrees Fahrenheit and cover a shallow oven tray in a sheet of foil.

    Melt the butter in a microwave or over the stove, then add to a small mixing bowl. Whisk in the mustard and dill to combine.

    Arrange the green beans on the foil lined tray and nestle the salmon fillets in between. Season with the salt and pepper.

    Drizzle the melted butter mixture over the fish and vegetables.

    Lay another sheet of foil on top of the salmon and beans and fold the edges over, creating a loose parcel.

    Transfer to the oven to bake for 15-18 minutes until the vegetables are tender and the salmon is cooked through and flakes easily with a fork.

    Delicious! Although I substituted asparagus for the green beans is there a way to change the info in the recipe to adjust for the asparagus? Not sure it makes a difference...

        I cooked the beans in a pan with butter & a couple cloves of garlic for 10 min. before adding to recipe. Also added a dash of onion powder.

        I added more butter. It also could use a sprinkle of garlic powder on the green beans. It was kind of bland. Will probably try again with my own seasoning.

          I think the fat content may be way to high. 74 grams for salmon, green beans, and 1 tablespoon of butter ?

            Agree - that's the total amount of fat for the recipe, however protein has been calculated per serving.

          I think there is an error in the ingredients list - I’m guessing each salmon filet should be 4 oz, not 14? This should then drop the protein Amy considerably I’m hoping. :)
