Keto Cacio E Pepe Chicken And Zoodles
If you love cheese and butter, then Cacio e Pepe is your kind of dish! Zoodle pasta is dressed in a buttery drizzle with globs of melted parmesan cheese. Simply seasoned chicken breasts are cooked to a golden brown and topped off with its own layer of melted parm. For the real cheese fiends, you can even add extra parmesan at the end of cooking or a dash of extra cracked black pepper.

Step 1
Preheat an oven to 400 degrees. Spiralize your zucchini until you reach the weight listed in the ingredients. Spread the zoodles out on a seasoned sheet tray and bake in the oven for 17 minutes. When done baking, sprinkle the salt and pepper over the zoodles and set aside for later.Step 2
While the zoodles are baking, prepare 4-oz chicken breasts by seasoning them with the salt, pepper, italian seasoning, red pepper, and onion powder.Step 3
Heat the olive oil in a pan over medium-high heat. Cook the chicken for about 4-5 minutes per side until both sides are golden brown.Step 4
When you flip the chicken over while cooking, sprinkle about 2 tsp of parmesan over the top of each breast so it melts during the remaining cooking time.Step 5
Toss your zoodles together and arrange on serving dishes each with a cooked chicken breast. Return your pan to the stove and melt the butter in the pan to deglaze it over low heat. Stir in the pepper and remaining parmesan into the hot butter. The cheese will melt and may clump together a little - don’t worry as this isn’t a cream-based sauce.Step 6
Pour your hot parmesan butter sauce over your chicken and zoodles to finish the plating. At your discretion, you may even garnish with additional parmesan cheese.

Also, leave out "Italian seasoning" 😳 Adding that stuff doesn't make your dish more Italian 🤦🏻♀️ in this case, you'll ruin it. If you want herbs on your chicken put a little fresh parsley at the end of cooking it or even basil (fresh). And maybe a few drops of fresh lemon juice (just on the chicken, not the zoodles!) -an Italian girl

Obviously this can't be real cacio e pepe without real pasta, but Romano cheese is keto friendly so for heaven's sake dont use "parmesan" in this dish! Use real Romano cheese from Italy and if you can't find that at least use real Parmigiano or Grana Padano not Americanized "parmesan". It's a disgrace.
