Ingredients
- Black Olives - 10 medium 
- Green Beans (string Beans), Raw - 5 ounce 
- Garlic - 1 clove 
- Lemon Peel Or Zest Raw - 1 tsp 
- Olive Oil - 1 tablespoon 
- Capers - ½ tablespoon, whole pieces 
- White Onion - ½ small

- Step 1 Add the green beans to a pan of boiling water and simmer for 3-4 minutes until just tender. Drain completely.
- Step 2 Whilst the beans are cooking, thinly slice the onion and olives, crush the garlic and roughly chop the capers. Heat the olive oil in a skillet over a low/ medium heat. Add the onion and sweat gently until tender.
- Step 3 Add the olives, capers, garlic and lemon zest and stir well to combine. Cook for a minute or so until tender and fragrant.
- Step 4 Add the beans to the pan and toss to combine. Cook for a further minute or two until the beans are hot through.
