This chocolate cake is so rich and moist thanks to the addition of super strong brewed coffee. I add my coffee slightly cooled but still hot which is the trick to getting the almond flour hydrated and therefore moist after baking. The cooled cake is topped with extra fluffy cream cheese frosting!

  • Step 1

    Preheat an oven to 350 F. Combine all the dry ingredients together in a medium mixing bowl.

    In the meantime, melt the butter in a heatproof bowl in the microwave in 30-second increments until melted. Add the vanilla.

    Add butter mixture to the dry mixture and slightly mix then add the eggs (mix slightly).

    Add the coffee (the stronger the coffee the better!), do not add the coffee to the cake batter when it is too hot, but really warm is ok.

    Taking a piece of parchment paper, cut it into a square and fold it in half to make a triangle. Keep folding the triangle to make it a thin piece and then measure it against the round, greased cake pan by putting the tip in the center of the pan.

    Cut it and then unfold it to form a circle and place it in the bottom of the pan and lightly spray paper with cooking spray.

    Pour batter into a very well greased or sprayed with cooking spray 8” round cake pan.

    Bake for 20 minutes or until a toothpick inserted into the center of the cake comes out clean or the cake springs back to the touch. Allow the cake to cool completely before frosting it with cream cheese frosting.

    Remove cake from pan by turning it upside down on a plate and remove parchment paper.

    Beat room temperature cream cheese, ¾ cup Swerve icing sugar, almond extract and a pinch of salt to a mixing bowl and beat until fluffy. Add 1 tablespoon cream and beat until well combined and fluffy.

    Frost cake with fluffy cream cheese frosting. Keep cake stored in the fridge, but remove and allow to come to room temperature before serving!

    A little confused how is it 37 grams total in carbs but 5 net? Doesn’t that ruin our total carbs for the day? Cake is delicious but I am worried now, that I ruined my day with 1 slice

      Sugar alcohols can be deducted like fiber is

      On keto it’s the net carbs that are counted, not the total carbs.

    Can I skip the coffee and add something else? More flour or chocolate...or nothing at all?

            The cake was very good! It was my first time using Swerve, and the icing ended up spicy 🤷🏻‍♀️ I don’t know how or what happened, but it was like someone added cayenne pepper! Has anyone experienced an odd reaction with cream cheese and Swerve? Or maybe the Swerve and almond extract?

              To me, Swerve is cool like a peppermint patty, but I could see how that could feel hot.
