Ingredients

  • Scallions

    2 medium - 4 1/8" long

  • Cilantro

    Cilantro

    1 tablespoon, chopped

  • Peppermint, Fresh

  • Extra Virgin Olive Oil

    1 tablespoon

  • Hot Chili Peppers, Green, Raw

    ½ each - approx 4" - 6" long

  • Lime

    ½ each - 2" diameter

  • Cucumber

    Cucumber

    ¼ large - 8 1/4" long

  • Salt

  • Step 1

    Finely dice the cucumber and scallions and add to a small mixing bowl. Slice and de-seed the chilli and finely chop, add to the bowl also. Toss to combine.

    Roughly chop the cilantro and mint leaves and add to the bowl. Season with a little salt and pepper and mix well.
  • Step 3

    Add the olive oil, lime juice and the zest of half the lime. Give everything a good stir and leave for 10 minutes to infuse the flavors before serving.

    I made mine without the peppermint and removed the seeds from the cucumber. It is fresh and a good accompaniment.
