This refreshing take on egg salad utilises our zesty avo lime mayo as a dressing for chopped hard boiled eggs. You will want to make the whole batch of mayo as per the recipe to have enough to coat the eggs.

With a citrus twist and fragrant cilantro, this simple salad makes a great addition to the summer BBQ.

This recipe serves 2 as a lunch but would also work well as 4 individual snacks.

Recipe Steps

  • Step 1

    Add the eggs to a small saucepan and cover with cold water. Bring to a boil before reducing to a simmer for 7 minutes.

    Drain the hot water and rinse the eggs immediately in cold water to cool. Once cold enough to handle, peel off the shells.

    Roughly chop the eggs and add to a mixing bowl. Season with a little salt and pepper.

    Pour the avo mayo dressing over the eggs and mix well to combine, coating all the egg in the mayo.

    Divide the egg mixture evenly between 4 lettuce leaves and scatter with fresh cilantro to serve.

      This recipe is excellent. But what happened to the handy way a recipe used to pop up, if you clicked on it when it was part of the ingredients list? The old carb manager used to have this handy feature. Now you have to go in search of it. Not nearly so handy.

        Avo mayo lime dressing 1/2 C mayo 1/2 an Avocado 1 Tblsp cilantro 2 tsp lime juice 1 tsp lime zest Salt and pepper Blend mayo and avocado Add remaining ingredients, blend till smooth

          The best mayo is Primal Kitchens Avocado Oil Mayo...clean ingredients with no dairy or soy or other seed oils. Pricey but worth it! Just add the lime.

          Me either! I must have that gene that makes it taste like soap! I would use fresh chopped parsley.

          I am another lady who carries the gene that means cilantro tastes like soap! I usually substitute with either parsley, leaves from a celery, or chives (depending on which I think will work best with the recipe)

          Hi, the recipe would still be nice if you leave the cilantro off completely, or you could use fresh parsley.

            This was really good. I enjoyed the flavours a lot and wouldn’t have paired with eggs on my own. After 2 leaves I’m stuffed. No sacrifice of flavour for low carb. It’s a win

              I really like this recipe. The ingredients came together so well which made the dish wonderful flavor. I didn't use romaine lettuce but instead used fresh spinach as in a salad. It still was delicious.

              Does this recipe include the nutrition from the dressing also since directions tell you to get the recipe from the sides section or do you need to also add that for correct tracking?
