Unfortunately, you cannot. The xanthan gum thickens the sauce and gives it that stickiness associated with many Chinese dishes. Without it, the sauce won’t stick to the wings. Start with ½ teaspoon of xanthan gum and let the sauce simmer. Test it by dipping one wing in; if the sauce doesn’t stick to the chicken, you may add another ¼ tsp of xanthan gum to the sauce and let it simmer again.

Is this Keto Chinese chicken recipe gluten-free?

The only ingredient containing gluten in this recipe is soy sauce. Soy sauce is usually made of fermented soybeans and wheat. To make this recipe gluten-free, replace the regular soy sauce with the same amount of gluten-free soy sauce or 1/3 cup tamari.

    Preheat your oven to 210 C/ 425 F. Line a baking sheet with aluminum foil and place a rack on top. In a bowl, toss the chicken wings with salt, pepper, and oil.

    Arrange the wings on top of the rack. Transfer the baking sheet to the oven. Bake for 15 minutes.

    While the wings are cooking, prepare the sticky sauce by whisking the soy sauce, vinegar, water, minced garlic, ginger, sesame oil, honey-flavored syrup, and xanthan gum in a saucepan. Place the pan over medium heat and bring to a simmer. Let the sauce thicken, then take it off the heat.

    Take the baking sheet out of the oven and flip all the wings. Return to the oven and bake for another 20 minutes until cooked through. Transfer the wings to a large bowl.

    Pour the sticky sauce over the chicken wings and toss. Slice the scallions and add them to the chicken. Toss again.
