  • Step 1

    Preheat an oven to 350 F. Prepare a 8” round cake pan by spraying it with cooking spray Combine the dry ingredients together (almond flour, 1 cup Swerve, baking powder and kosher salt).

    Melt the butter in a microwave safe bowl. Add this to the dry ingredients along with the vanilla extract and the eggs. Mix slightly.

    Heat the almond milk in a heatproof container until hot. Add to the batter and mix well to combine.

    Pour cake batter into prepared cake pan and bake for 35 minutes until cake is puffed and cooked through. You can insert a toothpick into the center of the cake; if it comes out clean it is done. It is hard to overbake this cake. Remove from the oven and allow to cool completely in the pan before unmolding. To unmold, run a paring knife around the edges, place a plate on top of the cake pan and flip it to remove it.

    Comparing it to a box cake was a stretch. Next time I’ll add coconut flour and less almond flour, and add less Bocha Sweet…a cup was too sweet for me. Made 12 muffins.

      Light and fluffy. I split the batter in 2 cake rounds cooking it about 25 min ish tell toothpick came out clean. Very moist then because I didn’t have frosting used keto chocolate pudding but with heavy cream instead of almond milk. Put in middle and on top. Kind of made a truffle type cake. But do let cool cake completely as mine split as still warm before removing from pans.

        I wouldn’t describe this as anything like a boxed white cake, it was way denser but still very good and satisfying. Probably drop a few minutes off the bake time next time.

          So so...took 45 minutes to cook and came out crumby. Used monk fruit instead and it turned out too sweet for me.

            I wish I could add how much vanilla that I added to this recipe in Carb Manager. I double the amount of vanilla. My first attempt cake was dry and tasteless.

              I think I did something wrong lol this was not a batter. I added rum extract to it I think if I only had vanilla it would have tasted gross but it wasn’t bad for a Cake fix although it was NOT a batter for me topped with cheesecake fluff

                Really good! First time using Swerve, I will cut back in the frosting next time. This was a test run for a birthday girl who is doing fantastic in a keto lifestyle, my daughter. We are both having great success and are excited to discover recipes like this delicious cake!

                  This was really good. Wasn't sure if I would like it plain but I did. I wanted to try and add a topping but didn't have anything so I had to be creative. I added some sugar free maple syrup. It was Soo good. Highly recommend

                    Made these as cupcakes (no frosting) and they are delicious (especially warm). Made small ones for portion control - 18, which makes macros really hard. Next time, I'll make 16 and allow myself 2. So I can count them as 1 slice of cake and log macros easily. Also, my non keto boyfriend enjoyed them; are 4 of them before I had even tried them and said they were really good in surprise. Lol.

                      I made this just now and WOW! Topped with a tablespoon of vanilla cheesecake fluff and homemade sugar free blueberry-strawberry jam (made with stevia and lemon juice) and I am one extremely happy camper! Texture is more like a crumb cake but hey, I’m all about the cake!

                        Use coconut flour or get the ultra fine ground almond flour if u don't like the texture or taste of regular almond flour

                          It does not taste better than boxed lol, it tastes like almond flour and has a weird texture like all almond flour baked goods. Feeling pretty bummed actually.

                              Made this last night. Served it to non-keto guests with a tablespoon of home-made whipped cream and a sliced strawberry. It presented lovely and tasted wonderful. It even passed the test of the 10 year old boy (never made a sound while he devoured his slice). And the portion isn’t a tiny sliver of cake but a real slice so you don’t feel deprived. I would say this recipe is a keeper!!

                                Consistency is a little different than a regular cake, but it tastes great and satisfies the sweet tooth. Put a little sugar free strawberry preserves on top with some whip cream....Amazing!

                                  I threw some Lily's dark chocolate chips on top before putting it in the oven. It was amazing and I even had two slices :) Wondering why the people posting do not understand net carbs and say this is to many. Just wondering how long they have been doing Keto/Low Carb? SMH

                                    Great cake....Made it twice! Used coconut milk insted of Almond and worked great. And used almond extract instead of vanilla. Loved it! Dab a bit of whipped cream for topping and its stellar for us!

                                        I used lakanto monkfruit and still liked it and so did my non keto boyfriend who does not like the aftertaste of swerve

                                        Sukrin makes a great powdered sugar. It’s a combo of erythritol and stevia, so no aftertaste!
