Snacks are very important to have around when you are on the keto diet. If you have snacks prepped and ready to go, it’s easy to reach for a keto approved snack versus something that could take you out of ketosis. Nuts help me stay full and are loaded with healthy fats and chocolate is a good way to satisfy a sweet tooth. Feel free to top these clusters with any other freeze dried low carb berry like raspberries or blueberries! I also like to keep these in the freezer until I’m ready to eat them as it makes them extra cold, crunchy and delicious.

Ingredients

  • Pure 85% Dark Chocolate Non Gmo by Theo

  • Blanched Slivered Almonds by Blue Diamond

  • Sea Salt

    Sea Salt

    ¼ teaspoon

Recipe Steps

  • Step 1

    Break dark chocolate into pieces and melt in the microwave in 30 second intervals stirring well each time. Once the chocolate is mostly melted and there are a few small unmelted pieces left, keep stirring as they will melt on their own.

    Add in the almonds. Stir for 30 seconds until the chocolate thickens and cools slightly.

    Scoop onto a parchment lined baking sheet in heaping teaspoonfuls to make 10 clusters. Sprinkle with flaky sea salt! Freeze until set. Once set, keep in freezer until ready to eat.

    I made these with whole almonds and made tiny little clusters. They're like little fat bombs that are delicious! Will make this again but will try adding keto caramel

      I ran out of almonds, so I used half unsweetened coconut flakes and half almonds. Also added cayenne!

            The chocolate gets glossy and smooth with the addition of a tablespoon or two of coconut oil. I think it adds a good flavoring too.

              How can I make chocolate that is a little sweet with a Baker’s no sugar chocolate bar? Don’t have a Theo bar in the house. And, I think Theo bars are a little pricey. Thoughts?

                Lily's chips work well too! And they are already a little sweet (erythritol). Hardly any net carbs.

                Try 80% or 75% chocolate. Might be just a little sweeter w/o adding too many carbs.

              I made these up first thing this morning. They really a a good sized piece of candy! These were good, I may have gone a little heavy on the salt but it was delicious.

                  Followed your lead with 1 tsp vanilla and 2-3 tbsps of heavy cream. Didn't change the macros much!

                            Cashews or pistachios. I’m allergic to almonds as well. So I have to adjust recipes that call for almonds or almond flour.
