Ingredients
Chicken Thigh With Skin

Chicken Drumstick With Skin
4 medium
Extra Virgin Olive Oil
3 tablespoon
Lemon, Fresh
1 medium - 2 1/8" diameter
Dill Weed, Fresh
4 tablespoon
Basil
2 tablespoon, chopped
Parsley
3 tablespoon, chopped
Cilantro
2 tablespoon, chopped
Garlic
4 clove
Salt
¾ teaspoon

Add all of the ingredients except the chicken into a blender.Step 2
Blend until smooth and set marinade aside.Step 3
Pour marinade on the chicken pieces and toss and rub chicken in the marinade. Refrigerate for 2-4 hours.Step 4
Preheat the oven to 400 degrees Fahrenheit. Lay the chicken pieces out on a sheet pan in a single layer, allowing space between pieces.Step 5
Roast for 45 minutes - 1 hour, or until the skin is golden and begins to crisp.

If I would like to freeze some portions would it then be better to freeze before or after cooking?

I made a complete chicken, i marinated the chicken for only 2 hours. I will be making this again the chicken is tasty and delicious 😋

So glad you mentioned a whole chicken I was just looking through all the recipes and no one seems to use a whole chicken I will try this tomorrow

Roasted a whole chicken with this recipe. Included rosemary and sage as stuffing too. Very moist and delicious.

I washed the lemon, cut it into small chunks - removing the seeds - and tossed it into the blender.

I would think the white pith of the lemon would make the recipe bitter. I would zest the whole lemon and add the juice.
