Easy Keto Cheeseburger Soup
Most Keto soup recipes are a great comfort to your body and soul, and this Keto cheeseburger soup is no exception. This soup version of a cheeseburger is creamy, hearty, and loaded with delicious ingredients. It takes 30 minutes to prepare and is ideal for feeding crowds. But best of all, this soup is loved by everyone whether on a Keto diet or not.
What goes into this low-carb cheeseburger soup?
You can think of this soup as a deconstructed cheeseburger in soup form (minus the bread). The main ingredients in this Keto meal are beef, cheese, mustard, tomato paste, and beef broth. We have used dried versions of onion and garlic to make this recipe quicker and avoid chopping. All these flavors cook down to create a beautifully rich cheeseburger soup. Then, we garnish it with authentic cheeseburger toppings like pickles and onions.
Is this Keto soup suitable for meal prep?
Yes, this soup is ideal for Keto meal prep. Making a larger batch is just as quick and easy. Simply cook your soup and allow it to cool completely before dividing it into individual containers. This soup will last in the fridge for up to 4 days. Just microwave it for a couple of minutes before eating.
What toppings can you add to this soup?
The best thing about this low-carb soup recipe is that you can customize it however you like, especially with the toppings. We have added pickles, cheddar cheese, and green onion, but you can add whatever you like. Some great ideas include cooked bacon, grated Swiss cheese, crumbled blue cheese, caramelized onions, and many more. If you really miss the bread, then you can enjoy this soup with a slice or two of Keto bread. The options are endless.

Husband and I throughly enjoyed—a few modifications though, i drained some of the oil off of the meat and I used sugar free ketchup in lieu of tomato paste. Dill pickles are essential, so don’t forget!

This was amazing I used ground turkey instead of ground beef. I Used Mrs. Dash instead of salt

This is amazing good! I’m not one who gets cheeseburger lust, but this is everything about a burger that I like with no stodgy bun to get in the way of the flavors. My only issue, if any is 1- it’s a bit salty. I would cut out the 1/2 tsp of salt in the recipe. And 2- the portion was a bit small. Also I had no tomato paste so I used sugar free keto ketchup instead. It adds a vinegar tang that balances the oil in the dish.

I liked this soup! However, I'll probably either drain some of the fat from the beef or nix the oil when I make this again. It was a bit too greasy for me. (Guess it depends on whether I'm craving a greasy diner burger or a gourmet one!)

Made and ate this for dinner tonight. Left all my ingredients out and made another batch after dinner.

Pretty good! Easy to make. Definitely tastes like a cheeseburger in soup form. Next time I think I’ll about twice the tomato paste because the mustard taste was so strong and the tomato (ketchup) flavor was so greatly overpowered that I don’t think I even tasted it. I’d also like to figure out how to add some veggies. If anyone has any ideas, I’d love to hear them!

The easiest way for more veg would be to add a side salad or lettuce as a garnish. If you want to add to the soup itself maybe add cabbage? It holds up well in soups and will stick to the burger theme by adding a leafy crunch.
