Keto Cinnamon Bread

This sweet cinnamon Keto bread recipe combines the texture and flavor of both cake and bread. Our easy low carb bread is simple to prepare by hand and does not require the use of a bread maker or food processor. Once prepared, the bread batter is oven-baked until golden and can be enjoyed warm or cold. Perfect for breakfast or as a sweet afternoon treat.

Can I Make This Dairy-Free?

We have added melted butter and yogurt to our Keto bread recipe. These Keto friendly fats not only help to bind the mixture but also add moisture to the loaf. If you are following a dairy-free diet, you may swap the butter directly for coconut oil. You may also swap the yogurt for a non-dairy Keto compliant alternative, such as coconut milk yogurt. This may alter the texture a little, but will still contribute to the flavor and consistency of the bread. Please be sure to adjust your macros to account for any changes made to the original recipe.

Serving Suggestions

This versatile Keto bread recipe can be enjoyed a number of ways. Once the bread is cooked, it can be served warm and topped with a hearty helping of butter, perfect for snacking or as a post-dinner treat. Alternatively, this makes an excellent breakfast bread, as it is, or toasted. Why not try topping with your favorite low carb nut butter and a scattering of fresh blueberries?

Recipe Steps

  • Step 1

Add the ground almonds, coconut flour, 1 heaped teaspoon of the ground cinnamon, baking soda, erythritol, and salt to a large mixing bowl. Mix together well to combine. You may use an alternative granulated low carb or powdered sweetener if desired, adjusting quantities to suit your personal taste.
    Step 1
  • Step 2

Preheat the oven to 350 degrees Fahrenheit and line a loaf tin with baking paper. Add the melted butter, yogurt, lemon juice, and vanilla to the bowl with the dry ingredients. Stir everything together well to combine.
    Step 2
  • Step 3

Crack the eggs into a separate mixing bowl. Whisk the eggs together vigorously for a few minutes until combined. The eggs should be light and frothy and have increased in volume.
    Step 3
  • Step 4

Pour the beaten egg mixture into the bowl with the dry ingredients. Fold the egg and flour mixture together until well combined. The mixture will be thick and dense, similar to a muffin batter. Add the lakanto syrup to a small bowl with the remaining ground cinnamon. Stir together well to combine until smooth. Set aside.
    Step 4
  • Step 5

Spoon 1/3 of the bread batter into the lined loaf tin. Use the back of a spoon or spatula to level the mixture so that it is smooth and even. Drizzle 1/3 of the cinnamon syrup randomly over the bread batter. Repeat this process with another 1/3 of batter and a 1/3 of syrup until you have used up all the bread mixture, and the loaf is drizzled with a final layer of syrup. Transfer the loaf to the oven to bake for 50 minutes or until completely cooked through, golden brown, and a skewer comes out clean.
    Step 5
  • Step 6

Set the bread aside to cool and firm little. You may serve the loaf slightly warm if you wish. When ready to serve, slice the cinnamon bread. You will get 12 slices from this low carb loaf.
