Ingredients
- Ground Turkey - 4-½ ounce 
- Olive Oil - 2 tablespoon 
- Raw Egg - 2 medium 
- Cauliflower Rice - 1 cup 
- Cilantro - 1 tablespoon 
- Red Onion - 1 tablespoon 
- Garlic - 1 clove 
- Cumin, Ground - 1 teaspoon 
- Gourmet Collection Smoked Paprika by Mccormick - 1 tsp 
- Red Bell Peppers, Raw - ½ medium - 2 1/2" diameter x 2 3/4" 
- Tomato - ½ medium - 2 3/5" diameter 
- Salt, Sea Salt - ¼ teaspoon 
- Black Pepper - ⅛ teaspoon

- Step 1 Heat a tablespoon of olive oil in a skillet over a medium heat. Add the turkey and cook until just browned all over.
- Step 2 Whilst the turkey is cooking, finely dice the onion, mince the garlic and dice the tomato and pepper. Once the turkey is just cooked, add to the pan with the remaining olive oil. Sweat gently until tender.
- Step 3 Add the cumin and paprika and stir well to combine.
- Step 4 Add the cauliflower rice to the pan, season and mix well. Let the rice cook for a minute until hot through.
- Step 5 Beat the eggs together in a small bowl. Make a well in the center of the rice and pour in the beaten egg. Let the egg settle and cook for a moment then take a spatula and scramble the mixture, folding it into the turkey rice until cooked through.
- Step 6 Scatter with fresh cilantro to serve.

I made this with impossible beef and it was very good and satisfying for lunch. I would definitely make it again.

If cooking, I use avocado or coconut oil because olive oil has a low smoke point and could denature. Olive oil is for drizzling.

Do you make the cauliflower rice from fresh, or buy the frozen???

This was surprisingly delicious! Didn’t even know there was such a thing as cauliflower rice, now I add it to my cooked veggies, very goid.
