Recipe Steps

  • Step 1

Dice the chicken and pork sausage into small pieces. Combine these in a large skillet with chopped ham, and cook on medium-high heat for 5-7 minutes, until the meat is all cooked through. The juices from the chicken and pork should eliminate the need for a cooking oil.
    Step 1
  • Step 2

In a medium bowl, whisk together the eggs, salt, pepper, and red pepper.
    Step 2
  • Step 3

Pour the egg mixture into the skillet with the meat, and cook on medium heat until the eggs are to your preferred doneness. Use the spatula to continually scramble the eggs.
    Step 3
  • Step 4

In the final stage of cooking, sprinkle the cheddar cheese over the eggs so it melts.
    Step 4
  • Step 5

Serve the meat lover’s scramble with freshly chopped chives!

Copy the recipe to "my foods" then you can make any ingredient changes or substitutions and have the more accurate nutrition information

You will need to add the ingredients individually to your food log if you want to make any ingredient changes to the recipes.

This recipe was super Duper filling! Adjust serving(s) accordingly. I did not notice you could do that until after I had made it! Thank goodness I made it with less ingredients or I would’ve gone way over on my nutrition for the day! My idea of a comfort breakfast although I used two eggs instead of four & 1oz sausage (1 patty) because I knew I wouldn’t be able to eat all of it! I weighed 2 ounces of chopped rotisserie chicken that I keep on hand in sandwich bags in the freezer. I don’t like red pepper flakes so I omitted that.

You can substitute any protein with meats more suited to your taste. However, you will be losing most of the fat, since a majority of the fat macros in this recipe comes from the pork sausage. You can add some heavy cream to your eggs before cooking to bring some fat back into the meal.

Just noticed we can adjust the serving size to one. This way we can only cook for what we need 👍🏼👍🏼 ‘Cause if I cook / I eat it all 😛

you look at the yield size it has a plus and minus and you can make it for one. Easy Peasy.

I’m going to assume that one quarter of what’s in the pan is considered a single portion because they indicated the recipe serves four??
