These almond crackers are salty and nutty! I love how delicious they are and could be paired with cheese for a snack or marinated olives. They would even make great croutons on top of a salad!

  • Almond Flour

  • Extra Virgin Olive Oil

  • Step 1

    Preheat an oven to 325 F convection or 350 F conventional. Add the almond flour, walnuts, flax, salt, water and olive oil to a food processor.

    Blend until completely blended and the walnuts are completely incorporated into the dough.

    Dump the dough onto a piece of parchment paper and lay another piece of parchment on top. Press the dough flat with your hands. Then use a rolling pin to roll the dough out very thin (1/16”). It will not be a perfect square.

    Use a pizza cutter to cut the crackers into 1 ½” x 1 ½” pieces. Do not separate them, bake them as is. Slip the parchment paper onto a baking sheet and bake for 15 minutes.

    Remove them from the oven, break them apart, flip them and bake for another 5-7 minutes. The crackers should be lightly golden on each side.

      Made these today. Skipped the walnuts and added 1/4 up of lupin in flour. I added a little extra water as I was mixing and when I noticed that it was too crumbly, I added a whole egg. I also added everything bagel seasoning (wish I hadn't). I mixed until it turned into a dough then rolled out to about 5mm thick. I also scored them so make it easier to take apart. Baked at 325 for about 20 minutes and broke them apart and separated. Then another 10, checking every 5 for doneness. It could have done without one extra 5. The seasoning was overpowering. However, they were crispy and quite good! No seasoning next time. Or maybe different herbs.

        I added a sprinkle of everything bagel seasoning to the crackers and gently pressed it into the dough before baking. They are good and I will make them again. Watch the bake time and start checking them at around 12 minutes.

              Flax seed has a binding effect. You could try ground chia seeds instead.

            A bit on the delicate side, they break easily in dips.....and DELISH!!! Sprinkled lightly with garlic salt. Any tips on how to keep them from breaking so easlily? Did I roll them too thin?

              Try blending raw seeded zucchini in the mixture. Also, the flax seed meal is a binder, maybe add another tblspoon.

            Didn’t have walnuts so I used flavored almonds. Pretty good. Plus garlic powder

                  I added fresh rosemary and thyme from my garden, garlic and onion powder, fresh ground pepper, chia seeds and cooked them a little longer to make them extra crispy. DELICIOUS! I need crunchy snacks without cheese or egg
