We have used almonds, cashews, walnuts, and peanuts; however, you can omit/replace any of these. You can also add hazelnuts, macadamia nuts, or pecans. If you prefer to limit the nuts and add seeds, your best options would be sunflower seeds and pumpkin seeds.

    Preheat your oven to 300 F/ 150 C. Line a baking sheet with parchment paper and set it aside. To a large bowl, add the almonds, walnuts, cashew, and peanuts.

    Add the olive oil and toss to coat. Add the cumin powder, cayenne pepper, erythritol, salt, and black pepper. De-stem the rosemary and add it in.

    Mix to distribute the seasoning. Tip the nuts onto the lined baking sheet and spread them evenly. Transfer the baking sheet to the oven.

    Bake for 20 minutes total, stirring after the first 10 minutes. Take the baking sheet out of the oven and let it cool completely. Add the cranberries and stir them in.
