I love this Southwest Chicken Avocado Salad because it requires no cooking whatsoever as the recipe uses a rotisserie chicken! This is great for the summer months when it’s hot and you don’t want to turn the oven on, let alone, cook. I have spiced up the salad with curry and chipotle powder which gives it smokiness and heat! Serve with lettuce or as is.

  • Rotisserie Chicken

    Rotisserie Chicken

    4 cup, cooked, diced

  • Cucumber

    Cucumber

    1-½ medium

  • Celery

    Celery

    ½ cup, diced

  • Lime Juice Raw

    Lime Juice Raw

    1-½ tablespoon

  • Cilantro

    Cilantro

  • Step 1

    Remove pit and skin from the avocado and smash it in a large mixing bowl along with mayo, curry powder, chipotle powder and salt.

    Cut rotisserie chicken into small dices. As well as the cucumbers and celery.

    Combine all ingredients in the large mixing bowl and add lime juice and cilantro. Taste for seasonings and adjust to your liking adding more salt, lime juice, curry or chipotle powder to your liking!

    Served on romaine lettuce. Very good recipe coming from someone who’s not a big fan of cucumber lol! I substituted celery with fennel as that’s all I had in fridge

                This was decent but definitely had a kick to it. Tastes better cold (tastes after I cooked I put together). It does get spicier as it sits.

                    Delicious dish! I served it on a bed of salad greens with bacon bits, sliced hard boiled egg and chopped nuts. I added Italian seasoning to the greens. Instead of using celery in the recipe, I used chopped red cabbage. My husband and I love it!

                        We really enjoyed this!!! Yummy! I used my Chili Powder blend (frontier) and added an extra tbls of it. Added 2 tsp more lime & salt.

                          I made it exactly as the directions specify and love the curry and the Chipotle spices. Can't say enough good things about this receipe!!

                              I did enjoy this. I listened to the others and used cumin instead of curry. I do like curry But to me thats not Southwest I didnt have chipotle chili powder but i did have chipotle tabasco sauce and used that. Was filling to me. I’d make it again. In fact according to my meal plan its lunch tomorrow...Good thing i liked it 🤣

                                This is so good !!! I used Marsala and Cumin along with a tablespoon of Chia seeds and put it on a bed of spinach. 👍🏻👍🏻

                                  It came out great. I used cumin instead of curry and I diced up a Serrano pepper and add it. I would definitely make this for guests
