  • Lime Juice Raw

Recipe Steps

  • Step 1

    Cut the broccolini stems to remove the tough ends and add to a large mixing bowl with the baby spinach.
    Step 1

    Peel and mince the garlic and add to a small mixing bowl with the olive oil, tahini, lime juice and a pinch of salt. Stir well to combine.

    Peel and dice the avocado and add to the bowl with the broccolini and spinach. Season with a little salt and toss to combine.

    Sprinkle the pumpkin seeds and hemp seeds over the salad, stirring them into the vegetables.

    Pour the tahini dressing over the salad and mix through, coating all the vegetables.

    Leave to stand for 10 minutes before serving.

        TO the recipe creator: IMO I do not think this should be called a "Superfood" since people need to start doing their research on Oxalates and their toxicity to the human body, (cause kidney stones - damage the kidneys, as well as other organs - prevent the uptake of valuable minerals/vitamins. I calculated the Oxalates in this recipe with just the spinach, avacado, pumpkin seeds in this recipe on this site: https://globalrph.com/medcalcs/oxalate-content-calculator/ and it came out to 1, 745 mg. - That is very high. The calculator did not have Hemp and garlic listed so I could not calculate that. In closing - be careful what you call "Superfoods"

          I think it’s still safe to call this a superfood salad, as damage caused by Oxalates are generally due to excessive consumption. These are simply not a nutrient of concern for most people. If you are prone to kidney stones, or have had kidney-related issues in the past, you would most likely benefit from restricting oxalate consumption.

                So so good.. such a great salad to get your greens in while still staying low carb/keto. I made this salad last week and have been craving it since! I subbed broccolini for broccoli because it what I had in hand and it was delish
