Do I have to Use A Food Processor?

We have used a food processor to blend our mash to a smooth and creamy consistency. If you do not have a food processor, you can combine the ingredients using a handheld potato masher. If you choose this option, it is important to ensure the cauliflower is very soft, and it is best to crush the garlic before mashing. The consistency won’t be as smooth as it would be with a food processor, but it will be just as delicious!

Hints and Tips

It is crucial for this Keto Thanksgiving mash - and any cauliflower mash - that you take off as much moisture from the cauliflower as possible before mashing. After boiling, cauliflower tends to hold onto a lot of water. If this is not drained or patted dry, this will result in a watery mash. The cauliflower should be soft yet dry to give the consistency of cooked potato.

  • Step 1

    Add the cauliflower florets to a large saucepan and cover with boiling water. Bring the water up to boil then reduce to a simmer. Continue to simmer the cauliflower for 5-6 minutes or until tender and soft enough to mash. Drain completely and set aside to steam dry.

    Pat the cauliflower with paper towel to remove any excess moisture. Add the cooked florets to a food processor along with the butter, cream, garlic, Parmesan, salt and pepper.

    Blend everything until smooth and well combined - or to your desired consistency. Taste the mash and adjust seasonings as required. You may add more salt and pepper, butter or parmesan and extra cream if you would like a richer mash. Please be sure to adjust your macros for any changes made to the recipe.

    Transfer the mash to a serving dish. Finely chop the parsley. Scatter the parsley over the mash and serve hot with your Keto Thanksgiving main.

      This was absolutely delicious! We added chives to ours and it was perfect! Really easy to make too! We made it with Philly cheese steak stuffed peppers (recipe also from this app) and it was all fabulous.

        Wow, just wow. Mashed potatoes is probably the one thing I truely miss and crave. This was amazing, sometimes it almost tasted like mashed potatoes. Delicious.

          Really good flavor and texture! I speed things up with frozen cauliflower. Just be sure to drain well. Winner winner turkey dinner!

                I steam my cauliflower and then put it in my dehydrator. Then food process it and add the other stuff. This is terrific with roast beef.

                I’ll have to try making mashed cauliflower again. I tried in the beginning of my keto journey a few months ago and even though I used a cheese cloth to squeeze the water from the cauliflower it was just like kinda clear and soupy. Wasn’t even edible lol. Hopefully it’ll work this time! I made a great beef gravy with bone broth, seasoning and xanthan gum! Used too much of the xanthan gum and it had a weird texture lol but have used it since then and know now how a little goes a long way lol.

                  If you don’t mind a suggestion. Use the steamer so it doesn’t sit in the water. Drain in a colander and let it sit for a few minutes. Then whip with butter only. You will love it

                  Try roasting the florets on a baking sheet ( you can lightly spray them with olive oil 400degree oven for 25-30 mins! I even roast some onion and garlic with it. :)

                  I prefer to use Arrowroot flour to thicken sauces, i think xanthan gum tastes weird.

                  Try steaming instead of boiling it. It's less runny.

                  The trick is Do NOT boil it as indicated. Use a steamer instead. Gives you all the softness without that excess water.
