  • Step 1

    Prepare 2 chicken breasts by butterflying them and pounding them flat. Sprinkle HALF the salt, pepper, and garlic powder over the exposed sides of the chicken.

    Heat the olive oil in a medium sized skillet on medium-high. Place the chicken breast seasoned side down in the pan. Sprinkle the remaining seasoning over the bare side of the chicken.

    Place a lid over the chicken and cook both sides until it’s cooked through - about 4 minutes per side. Once done, transfer the chicken to a clean surface to cool.

    Keep the skillet on the heat. Toss the spinach and broccoli into the pan and coat it in the juices the collected. Cook for 4-5 minutes or until the broccoli becomes a little tender and gets a golden edge to it.

    *Transfer the cooked veggies to a bowl or plate. Return the skillet to the stove once more over very low heat. Melt in the butter. Place in 3 slices of lemon and the capers. Put a lid on the skillet and cook for about 3 minutes so a sauce developes. There should be little to no simmering.

    Return the two pieces of chicken and the veggies to the skillet. Get the ingredients coated in the sauce and replace the lid. Let the ingredients heat through on low heat.

    Enjoy hot! Make sure to pour any leftover sauce in the skillet over your chicken and veggies.

        I was hesistant of this recipe bcuz my wife loves chicken piccata. I used the tips to adapt meal for sauce, veggies and garlic choices. It was an easy to follow recipe and delicious. It was too delicious, in fact, because my wife wants me cooking it more often.

          This was very good!! Gave it 4 stars for lack of sauce, but read the comments before I made it and added some chicken bone broth. Served it with creamy herb cauliflower rice. Delicious!! !

            Very tasty. I microwaved the frozen spinach and broccoli b/c I didn’t think there was enough liquid. (Didn’t see the hint of adding broth). I doubled the recipe and if doing again, I would add more spinach. The recipe was definitely restaurant quality!

                This was really good. I took others’ advice and added an extra ounce of broccoli and 2 more ounces of spinach. I measured out a 1/4 cup of chicken broth and used a splash with a little butter to cook vegetables (i didn’t seem to have any juices/liquid after removing chicken) and the rest with the butter and lemons to make sauce. I squeezed a little juice from the lemon i had left after slicing.

                  I’ve made this three times. First with broccoli, second and third time no veggies. The sliced lemon and caper sauce is good. I added fresh chopped garlic and some chicken broth to increase the amount of sauce. It also helped get the tasty bits of cooked chicken (fond) off the pan. I make this weekly. Very good!

                      Excellent and very tasty. I didn’t have capers so used green Olives. I doubled the butter and added some extra lemon. Next time I’ll double the veggies too. Husband really liked this too -he put it over rice.

                            I am confused is this a serving for one person or two as i had half of the chicken breast and it only weighed 112 grams so it seems to me its only one serving for the whole cooked meal

                                  This recipe was very good, although I did modify it by adding extra butter, an extra squeeze of lemon juice, and 1/2 C of heavy cream to meet my fat Macros for the day.

                                      It was delicious but not enough sauce. I doubled the butter and double the lemons. I also doubled the spinach I put in about 7 ounces of spinach and I doubled up the broccoli and I only used one chicken breast sliced in half

                                        I LOVE Piccata and I was worried that this recipe wouldn’t live up to my favorite recipe that uses white wine and floured chicken and served over pasta. But it did! I did use a large clove of fresh minced garlic sautéed about 45 seconds after removing the chicken instead of garlic powder and I did not place a lid on the chicken as it cooked (wanted it to brown) and I added chicken broth to the garlic to make more of a sauce. I also used 8 oz of spinach - a whole carton and next time I’ll add more broccoli too. Yum! Almost forgot! I did like my other recipe calls for and used the juice of a whole lemon too instead of lemon slices. That might be too much for some but it’s perfect for my family.

                                            Great tasting recipe. 1oz of spinach is nowhere near enough though. After it cooks down you have one bite of spinach. Jack it up to 10oz.
