Step 1
Place the ground beef in a mixing bowl. Add in the arrowroot powder and ½ teaspoon of kosher salt. Mix the freshly cracked black pepper, white pepper, Sichuan peppercorns, and ¼ teaspoon of kosher salt. Add ⅔ of this mixture on top of the beef and stir the mixture well to incorporate it. Place it aside for now.Step 2
To make the sauce, combine the chicken stock, soy sauce, no-sugar ketchup, and sesame seed oil together. Mix it well. Set it aside.Step 3
Prep all the vegetables and aromatics, so they are ready to go into the stir fry. Peel and mince the ginger. Peel and mince the garlic. Deseed and cut the bell peppers into 1” pieces. Peel and cut the red onion into 1” pieces as well. Wash and destem the mushrooms, then cut them into quarters. You can place them on a plate in separate piles, so they are ready to go when you start to stir fry.Step 4
Preheat a large nonstick skillet or wok over medium-high heat until hot. Add half of the avocado oil. Add in the beef. Crumble the beef with a spatula slightly. Then allow the beef to cook on the first side undisturbed until it is nicely browned in spots. Then stir the meat really well and let more browning to happen.Step 5
You will feel like you are overcooking the meat, but this is exactly what you want. The browning that occurs adds lots of flavors. The browned bits that stick to the bottom of the pan will be deglazed in the next step. Once all the beef is browned, add the Shaoxing wine to deglaze the pan. Scrape the bottom of the pan to remove any browned bits, and stir the meat well to glaze the meat all over.Step 6
Once the meat is all browned, remove it to a clean plate. Set it aside. Add in the remaining oil and the minced garlic and ginger. Cook the aromatics for about 30 seconds or until fragrant. Add in the remaining vegetables. Cook the vegetables briefly, about 1 minute, until slightly softened but still brightly colored.Step 7
Add back in the beef. Then add in the sauce and cook everything over very high heat, stirring constantly until all the liquid evaporates and the meat and vegetables are nicely glazed. Serve immediately over cauliflower rice.Step 8
There should be 4 oz cauliflower rice per serving/bowl. Serve immediately so everything is hot and fresh. Enjoy!
