  • Step 1

    Preheat an oven to 350 degrees. Spray an 8X10 baking dish with pan spray. Arrange the spinach in the bottom of the dish. Drizzle the olive oil over the spinach, then sprinkle HALF the salt and pepper over the top.

    Prepare the chicken breasts by slicing two large breasts through the middle. You should have four 1-inch thick chicken breast, approximately. Lay the chicken breasts over the spinach and sprinkle the remaining salt and pepper over them.

    For the herb topping, combine all the remaining ingredients in a food processor. You should have a smooth, green, fragrant paste.

    Spread the herbed mayo topping over the top of each chicken breast, making sure all the exposed edges get covered.

    Bake the dish for 35-40 minutes. Enjoy!

    I wish I could submit a picture. Oh my word that was delicious. What I did slightly different - I used a basil paste instead of fresh, I used a rosemary sage infused salt as well as dry rosemary and fresh chopped parsley ( about 2 tbsp.) . I served on top of fresh spinach. I have chicken breast not cooked / will be making again tomorrow. Oh and I didn’t use a blender / didn’t need to with using the paste.

      This was pretty tasty, however, it cannot be 3 calories. Someone needs to fix this!

        Ho can it this be low? When i put the weight of the chicken alone it is 900 calories already

        So YUMMY!! Had leftovers on a salad the next day for lunch. Didn't even need salad dressing, so flavorful!! Loved it!

          leftovers, lol, im making it now not sure I'll have leftovers, lol. smells amazing. Great idea the leftovers on salad tho.....will probably do that as I have lots of spinach.

        This recipe was delicious. Other times I made it, I sliced a small onion and a few cloves of garlic and mixed it with the spinach. I had also put some shredded parmesan on top of the chicken... delish!

            I didn’t have spinach for this recipe. But it was amazing without it. I did slice open the chicken breast and put a slab of Monterey jack cheese inside!

              SO GOOD! I added a handful of fresh chopped cherry tomatoes on top right before eating and then a little bit of balsamic glaze on top for 1 carb per tsp and omg it was so delicious! Will be a staple from now on!

                        I did no have spinach so I replaced it with cos lettuce, also used Greek yogurt as I did not have mayo. Was delicious! Had broccoli with lemon on the side!

                            What is a good sub for mayo? Have a picky eater. Sour cream? Greek yogurt? Excited to try it!

                            This is a keeper! The only alteration I made was to leave out the rosemary.....which I dislike. Husband and daughter loved it....so we will make the recipe again soon. P.S. I served mashed cauliflower on the side.

                              Overall, really liked the taste. My picky eater of a husband liked it. Just wished the measurements were consistent. Fresh herbs were in ounces, tsps, and sprigs. Didn't have time to google to convert measurements for solids listed in ounces. Since I didn't have a food processor, I added olive oil and a bit of water to paste ingredients in blender, and it worked well. Used coarser pepper for cooking.
