Keto Instant Pot London Broil

This Keto instant pot London Broil is coated in an aromatic marinade then pressure cooked until tender and thinly sliced to serve. Our take on London broil is a great option for quick and easy Keto dinners as prep is minimal, and the beef can be marinated in advance, ready for cooking. Perfect served with a side of cauliflower rice or low carb vegetable fries.

What is London broil?

Often misinterpreted as a cut of beef, London broil actually refers to a method and style of cooking. Typically lean top round or flank steak is marinated in condiments and spices then broiled or grilled until medium-rare. The beef is then served thinly sliced across the grain. For this Keto instant pot recipe, we have used the instant pot to cook our London Broil until deliciously tender.

Can I Use a Different Marinade?

London Broil makes an incredibly versatile Keto dinner recipe. There are no rules and regulations regarding spices or seasoning, and you can experiment with your favorite low carb flavors as desired. For this Keto pressure cooker recipe, we have used a Mediterranean inspired marinade of Italian seasoning, olive oil, balsamic vinegar, tomato sauce, garlic, and onion powder. Please be sure to adjust your macros for any changes you make to the original recipe.

Add the beef stock to the instant pot. You may use a chicken or vegetable stock if preferred. Place the lid securely on the instant pot and ensure it is set to sealing. Select high pressure and set the timer for 12 minutes. After 12 minutes, do a quick release of the pressure. The beef should be medium rare, however cook longer if desired. Very dry and tough.

I treat the London broil like a pot roast and it comes out much more tender. I put a cube of butter in the instant pot with it. And don't tell anyone but I also put a can of Campbell's cream of chicken, maybe if you want to be strict keto you could put a cup of sour cream and a teaspoon of salt. The gravy was amazing though. London broil is nearly always tough and dry. I really don't know why people want to cook it so short. I did 90 minutes and it was tender like a pot roast
