Keto Vietnamese Peanut Sticky Rice

Keto peanut sticky rice is a fantastic and easy Keto Vietnamese recipe you can prepare in about 20 minutes. Traditional Vietnamese flavors are a perfect balance of sweet and salty flavors you will love, so we made the cauliflower rice sweet and the coconut milk drizzle on the saltier side. We highly recommend sea salt for the coconut sauce. If using kosher salt, you may need to use less salt or adjust it according to your taste.     Place the cauliflower rice in a medium-sized microwave-safe bowl. Combine it with 0.5 oz of canned coconut milk, monk fruit powder, and a pinch of salt. Stir well to combine. Microwave the mixture on high for 1-2 minutes until very hot.

    Press the cauliflower mixture tightly into a rounded cup. You will see some liquid rise to the surface. Pour any liquid off. Set this aside for now.

    In a small bowl, combine the remaining canned coconut milk and ⅛ tsp of sea salt. You want to use sea salt for this recipe because kosher salt will make it too salty.

    Turn out the cauliflower rice onto a plate. To do this, place a small plate over the cup with the cauliflower rice. Turn the cup over with the plate to invert it. Pour the coconut milk over the inverted cauliflower rice. It should be a nice mound. Sprinkle the crushed, salted peanuts on top. Serve immediately!
