  • Parmesan cheese, fresh (hard)

  • Step 1

    Heat the olive oil in a skillet over a medium heat. Add the bacon and cook through until crisp and golden. Remove from the pan with a slotted spoon and set to one side, leaving the fat behind.

    Crack the eggs into a mixing bowl along with the parmesan and season with salt and pepper. Beat together to combine.

    Heat the bacon fat over a medium heat then pour in the beaten egg. Leave to settle until almost cooked through. Carefully use a spatula to ease the cooked edges of the omelette away from the side of the skillet, allowing for any uncooked egg to flow underneath.
  • Step 4

    Turn the omelette out onto a serving plate and sit the cream cheese over one half. Shred the lettuce and roughly tear the bacon over the cream cheese. Fold in half to serve.

    I so wish you could deselect some of these ingredients and add more. Ie I don’t use Parmesan I added 20 g of cheddar so adding this recipe as a whole I log the carbs if Parmesan when I don’t include it. I therefore have to add all these individually! Most annoying

      I made it a blt instead. Mayo instead of cream cheese and added 3 cherry tomatoes. Was good but the eggs weren't very fluffy. I would add some milk to the eggs. Will try with cream cheese another time.

        Recipe was just ok. I've done cream cheese and bacon before. The parm added to the eggs didn't add anything flavor-wise, and the addition of iceberg lettuce made the whole thing disjointed and off. I used 2 large eggs, as I didn't have the 3 medium called for.

          This recipe was surprisingly good. I shared it with my husband. The eggs browned quickly with the Parmesan in it so I did have to turn the omelet over rather than follow directions. Will make again.

            3 eggs and 3 pieces of bacon and this is only 1 serving? It sounds great but hard to believe only one serving. I do wish that someone would clarify this for me. Reading through reviews, I never see a reply from anyone. Please reply?

              Note 3 MEDIUM eggs. This is equivalent to 3 large, which I believe most people buy. This is a normal keto amount of food, especially with IF.

              It’s a wonderful omelette but next time I make it I will use 2 not 3 eggs and mix cream cheese with Parmesan in eggs.. such a quick and easy meal!

              Three eggs is typical for an omelette served in a restaurant. The bacon seems right also. I’m getting ready to make this but I’ll substitute spinach for the lettuce. 👍🏻

                    A pleasant change for breakfast. I substituted crumbled Bleu Cheese for the cream cheese, didn’t add salt or pepper, added a small diced Campari tomato. One recipe was split between my husband and myself. Delicious and filling.
